Flavor Spotlight: Gary’s Lemon Berry // This one is pretty simple… it was one of the very first flavors we began experimenting with last summer! A close friend of ours, Gary, ate a tremendous amount of this when we were coming up with the recipe, so we named it after him.

We make a citrus custard full of fresh squeezed lemon & lime juice + zest. Then we make a zingy blueberry curd. Swirl the two together, and we have Gary‘s Lemon Berry. It‘s about as refreshing and zippy as a scoop can be…and certainly one of our best.

We don’t have an official opening date yet…but I promise this flavor will be available when we do!! We can’t wait to share it.

Flavor Spotlight: Flo’s Fancy // Toasted vanilla bean & almond ice cream with hunks of angel food cake and raspberry curd. This is a flavor we’ve been hoping to try out for quite some time, inspired by the Angel Food Cake my great grandmother Florence (or Flo) used to bring to every family gathering. Hers is the only experience I’ve had with this delightful cake and it’s indelibly associated with her memory. We made our first test batch last night and I think this is one of our best flavors yet. We can’t wait to share it with you once we are able to open!!

Do you have a family memory that we should turn into an ice cream flavor??

PS: We are working through the DEC permitting process and will make announcements as soon as we are able to open.

Flavor Spotlight: Rhubarbara // A couple months ago my wife and I were taking a little roadtrip down to Anchorage. On the way back to Fairbanks we stopped in Talkeetna at the Flying Squirrel Cafe and had this wonderful Rhubarb Cheesecake. We knew that we had to make an ice cream inspired by this lovely dessert -- and so we present to you: Rhubarbara. A cultured vanilla ice cream base with rhubarb jam and graham cracker bits. The challenge of how to create a convincing cheesecake flavor is one I'd been thinking about since that experience at the Flying Squirrel Cafe...and I think we've really done it here! As opposed to using regular heavy cream, we culture the cream with buttermilk. Give it a day, and you've got crème fraîche (basically sour cream). Use this in the ice cream and voila, you've got cheesecake! We also add vanilla bean, cinnamon, and a little pinch of cardamom. The jam and graham crackers complete the illusion. Of course it'll be tricky to do this flavor exactly outside of rhubarb season, but I'm sure we could make any number of tart jams that would work well in combination with the other flavors.

We're very open to suggestions if you have a favorite cheesecake flavor you'd like us to try using cheesecake base. Let us know :))

Flavor Spotlight // Mint Chimp: This is a new flavor concept we've been playing around with...it's a little strange and deserves some backstory. An ice cream collaborator and friend of mine, Tristan, and I have recently been discussing how we can make mint ice cream more interesting. Of course mint goes with chocolate...but does it go with anything else?? There are certainly contexts in which it would pair well with citrus, but that would be best suited for a refreshing sorbet.

Fast forward a few days...I'm working on 'Monkey Mode' (we'll make a post about this later), our salted caramel banana bread flavor...and I jokingly suggest 'banana mint chip' to Tristan as a flavor possibility. This was entirely in jest, as that sounds haunted.

A while later Tristan (king of puns) comes to me and says...'if you ever did make a banana mint flavor....you'd have to call it Mint Chimp'. It was then that we decided we had to try a banana and mint flavor, if only as an excuse to use the name. That was yesterday, today is today, and we present to you (a work in progress): Mint Chimp. A (real) banana & mint ice cream with dark chocolate covered toasted walnuts. It's almost like that viral gold / blue dress from years back...if you're thinking about banana, it's banana...if you're thinking about mint, it couldn't be anything else. The chocolate covered walnuts bridge the two - though actually they pair well on their own. As my wife (who hates mint ice cream) says..."It's not my favorite, but it definitely could be someones favorite". I'd have to agree. I don't think the recipe is perfect, but it is quite an interesting flavor and certainly merits more fine-tuning.

Would you be bold enough to try 'Mint Chimp'??

PS: We just today filed our food service permit applications with the DEC...more updates to come!! Hopefully we're just a few weeks away from sharing our ice cream creations with all of you.
