For our next Sunday Supper in the Suburbs, we’re hosting Chef and the team from for a joint, alternating-course dinner.
has known Carlos since their time at Hogsalt. As a sous chef, Carlos went through Rachel’s leadership-in-training program and attended her weekly classes. His sheer passion and love for Oaxacan cooking sparked Rachel’s own love for the cuisine, and along the way, she learned more about Carlos’ family’s home cooking and how he’s brought those traditions back to Chicago.
It’s been amazing for Rachel to watch Carlos open his own concept, and having their two restaurants come together for this dinner feels like a very special moment.
Istmo bridges ancestral Mexican heritage with modern technique, and this menu brings our two kitchens together to showcase traditional Oaxacan flavors alongside our live-fire style.
