Did some smoked green chile pulled pork enchiladas (casarole style) and some rice for some friends that ill be with tonight.

Barbacoa tacos for tonight's dinner.

Catered some brisket, smoked green chile mac n cheese, frijoles charos, corn bread, mixed veggies and some ribs for some customers today.

Did up some prime arrachera from cosco. Used some head country marinade and some cash cow from big poppa smokers. Cooked on the ugly drum smoker (uds) with some B&B charcoal.

I like it medium rare, the rest of the family like it more extra well done, so had to compromise.

Knocked out some caldo de res, rice and guacamole.
