The gravy is typically rich and tangy, with a balance of flavors from the spices and the tartness of tomatoes.
Bhature, on the other hand, are deep-fried bread made from a fermented dough. They are soft, fluffy, and slightly crispy on the outside. The dough for bhature is prepared using all-purpose flour (maida), yogurt, oil or ghee, and a leavening agent such as baking powder or yeast. The dough is allowed to ferment for a few hours or overnight, resulting in a light and airy texture. Bhaji, on the other hand, refers to a flavorful and spicy mixed vegetable curry. It is made by cooking a medley of vegetables such as potatoes, onions, tomatoes, cauliflower, peas, bell peppers, and carrots. The vegetables are mashed and cooked together in a blend of spices, including ginger, garlic, chili powder, turmeric, and pav bhaji masala—a special spice mix specifically used for this dish. The bhaji is usually garnished with fresh coriander leaves and a squeeze of lemon juice.
