My son, Graham, living on the Reunion Island, makes THE BEST Humous!! We had a beach party and he made three bowls! Graham is sharing it, in his own words, with all of you!

One can of chickpeas.
A good spoon (like a spoon of ice cream) of sesame butter paste.
(you would usually find that at Indian or Oriental store)
If you don’t have sesame butter, then you can just use a good dose of sesame oil, which is what I did last week. And in that case, I don’t add any extra olive oil, then that would be too much.
Add a bit of olive oil if needed.
Three or four cloves of garlic
A soup size spoon of cumin whole seeds…
Salt and pepper
A good dose of lemon juice (probably one lemon)
I add some spice: like a tiny drop of hot pepper oil for example.
It all goes into a pot and i mix it well with the stick blender.
Add more lemon and salt if needed after tasting… add a half cup of water if it’s too thick
Serve in a bowl… that you can shake even out the surface.
Top decoration : throw three or four chickpeas that you would have reserved to the side before mixing on top,
Sprinkle some paprika, cumin, seeds, thyme, maybe extra olive oil.
Goes great with crudités, labné, tagine, lamb, chicken, falafels, and taboulé. I will be making this lakeside very soon!! 👩🏼‍🍳
