Winter has arrived.

First cool day of fall has arrived. 34° start to the morning. Warmed up quickly so not sure if we got any frost or not. The other night I made chicken and noodles from a rooster that grew up on the farm. Paired with some wild mushrooms (hen of the woods) that I found in the woods on the farm. Fall and winter are a good time for homemade comfort food.

A shout out to The Red Basket Farm who sells produce a couple tents down from us at the Howe Meadow Countryside Food and Farms farmer market. Our own farm had such horrible weather early this summer that our own sweet corn crop is struggling. But we still LOVE to eat sweet corn. So we pre-ordered 5 dozen ears of sweet corn from Red Basket Farm so we could freeze some to eat throughout the winter. I often get asked "How much frozen corn do you get from 5 dozen ears of corn?". Technically I only froze 57 ears as we held a few ears back for dinner. So from those 57 ears, I got 12 pints, 4 pint and a half, and 2 quarts. Or converting to all one unit, that is 22 pints. That works out to around 2.59 ears per pint. Nice big ears!!!! And I'll add a picture of tonight's dinner: Peters Creek Farm baked chicken thigh, rustic cheesy mashed potatoes and corn-on-the-cob. So remember, if you want to freeze or can produce to use all winter, be sure to ask your local farmers market farmer about buying produce in larger quantities.

Hey all you Peters Creek Farm egg lovers! The weather may have delayed our planting this spring thus leaving us in short supply of produce, but the hens are still laying eggs. Little Bean Farm & Larder has graciously offered to sell our eggs for us for the time being. Their stand is right next door to where the Peters Creek Farm stand is usually located at the Countryside Food and Farms Howe Meadows Farmer Market. Liz sells flowers and vegetables at her booth. Thank you Liz and thanks to all our customers.

Leftovers mean it is casserole night! Cheesy Chicken Noodle Asparagus Casserole. Using some leftover Peters Creek Farm chicken. I also had a half pound of asparagus pieces and parts that did not go to the Saturday Countryside Food and Farms Howe Meadow market. Also some bell pepper from our own farm that I froze last fall. And thanks to Little Bean Farm & Larder for the scallions because they went in the casserole too. Using local foods whenever we can.

Happy dancing on the farm this week. The first asparagus of the season is heading to the Countryside Food and Farms farmers market at Howe Meadow. Tomorrow. Saturday May 11, 2019. 9am-noon. See you there!!!!

A HUGE thank you to everyone who braved the gray skies and 40 degree temps to come out to the first outdoor market of the season. Best part was the rain did not show up during the market. We look forward to another season at Howe Meadow. ♥️♥️♥️
