For Colombian coffee farmers, rainfall affects everything from flowering and cherry development to the health and productivity of the coffee plant.

With a very strong El Niño developing for 2026–27, hotter and drier conditions could put additional pressure on water availability across Colombian coffee regions.

And that matters beyond a single harvest. It’s another reminder of why water management, resilient farming practices, and responsible production are becoming increasingly important to the future of coffee.

At The Hermit Specialty Coffee, understanding where coffee comes from also means understanding the challenges faced by the people and places that produce it. If we care about where our coffee comes from, we have to care about what its future looks like.

Coffee mail is always a good day!

This one came from our fellow Colombian roaster Daniel at Flow Coffee Roasters in Georgia.

We treated ourselves to a Geisha from El Encanto farm in Palestina, Huila, produced by Frank Hoyos and processed with advanced fermentation. And judging by the smell alone, we’re in for something very fruity.

We care about delicious coffee, but even more about coffee with a story, a soul, and a connection to where it comes from.

Thanks, Daniel, for the coffee (and the little something extra!).

Meet Dominic!

We’re really excited to have him on The Hermit team here in Corpus Christi, supporting us with coffee operations and the continued growth of the brand.

Dominic brings a really interesting mix of experience to the role. He has a background as a barista, has worked in high-end restaurants and around w**e, and through that has developed a strong appreciation for taste, aroma, and the small details that can completely change an experience.

He also comes with experience in several other areas, which makes him a great fit for a role like this one, where being adaptable and willing to wear a lot of different hats matters.

Washed, natural, or honey? You’ve probably seen these words on a coffee bag before. But what do they actually mean?

Processing is one of the many decisions made long before coffee reaches your cup, and it can influence everything from how the coffee is roasted to the flavors, sweetness, acidity, and body you experience.

None of these methods is necessarily better than another. They simply create different possibilities for the coffee.

So next time you’re choosing a bag, take a look at the process. Understanding a little more about how your coffee got there might help you understand what you enjoy in your cup, too.

Switching to a lighter roast? Don’t be surprised if your shots suddenly taste sour and your grinder starts working overtime.

Lighter-roasted coffee is denser and harder, so your grinder has to work harder to break it down. Darker roasts, on the other hand, are more porous and brittle, making them easier to grind.

That difference can also change how your espresso extracts. A lighter roast generally needs a little more help to extract properly. Using the same recipe you used for a darker coffee can leave you with an under-extracted, sour shot.

It doesn’t necessarily mean something is wrong with your grinder—or your coffee. You may just need to adjust your grind and extraction.

Different coffee. Different behavior. Different recipe.

The more you understand your coffee, the better you understand the tools you use to brew it.

In a world of disconnect and superficial connection, soulful coffee is here to do the opposite.

So, why is specialty coffee more expensive? It’s not, you are simply paying for what wasn’t sacrificed to make it cheaper…

More intention at origin. More care for the land. More respect for the producer. More transparency throughout the journey. And more responsibility on our end as roasters to honor all of that work once the coffee reaches us.

When you pay more for specialty coffee, you’re not simply paying a premium for what’s inside the cup. You’re choosing to support a coffee chain where land, people, quality, and relationships matter.
