Chucky Bucks BBQ Chucky Bucks provides delicious smoke flavored BBQ using our original rubs, BBQ sauces, and homemade recipes. Always fresh - from our Pit, to your plate!

Many of the earliest barbecue establishments began with a Pitmaster and his barbecue "pit". The Pitmaster would sell his "take home" barbecue from a food stand located close to his pit. His stand was only opened on the weekends and he maintained a regular job during the week. The preparation of the pig and management of the pit required a knowledge that the Pitmaster had mastered over time. And with time, the Pitmaster also created his own barbecue seasonings and sauces to compliment his cooking style. The limited access to the Pitmaster's food made it that much more desirable. People would line up early on the weekends just to get a taste of the delicious food created by the Pitmaster and his pit. If you look hard enough, you will find Pitmasters like this today. They care more about the quality of the product they are serving than the quantity. And as such, they are limited to the amount of product created from their pit. They do not serve product made the day before - the food they provide is fresh off of their pit and held in their smoker only for a few hours at most. The best tasting BBQ is the BBQ that comes off the Pit and directly onto your plate. Chucky Bucks BBQ invites you to experience this old tradition of BBQ. We operate a seasonal food stand on our 5 1/2 acre property in Copley, Ohio. We provide delicious, smoke flavored BBQ on Saturdays and follow the traditions of the early Pitmasters. We only sell what we can place on our pit the day of cooking. We only sell on the Saturdays posted on this page, so please check this page for the right dates and times. We also post the BBQ items that will be sold on each date to give everyone a chance to look at the menu and check pricing. Everything will be first come, first served. The job that pays the bills has been keeping me very busy over the past couple of months and I haven't had any time to enjoy the pit.

Our Chuckie Bucks BBQ Bash was a tremendous success and it couldn't have happened if it weren't for the family, friends, and our new friends who stopped out to try our BBQ!

It was so nice to catch up with old friends, touch base with family members, and meet new faces that we hope we'll see again!

Most importantly, I want to thank my wife, Jamie, and my children, Chuck, Chris, and Chelsea, for helping their crazy dad out when he needed help! I love all of you very much!

The morning sun has barely made its entrance when the smoker is fired up. The smell of burning hickory fills the air as you fill the racks with ribs. Every 30 minutes you tend the fire and keep your temp at 250 - placing another stick of wood on the glowing coals just at the right time.

A light blue smoke whisps out from the chimney of the smoker as you sit back in your chair and admire the day before you. We know what's for lunch today! Smoke On!

My own experience with pellet grills is that they provide a great convenience, but their smoke flavor is lighter and their cook times can be longer than a stick burner.

I've bought smoke tubes and experimented with time and temps, but in my opinion, there is a reason why a good stick burner costs more than pellet grills.

That said, I still have two pellet grills that I enjoy using when I want to cook an overnight brisket. No need to stay up and tend your firebox.

MOBILE LICENSE UPDATE:

Well, BBQ Friends, it's all coming down to the wire! The inspection date has been set for May 16th! If we pass the inspection, we will be licensed immediately and can start serving our BBQ!

We have a few more items on the way, and we hope to have them within the next several days. We will post a tour of the Chucky Bucks Kitchen this weekend if the weather permits.

MOBILE LICENSE UPDATE:

I heard back from the Summit County Public Health Department today regarding my checklist, menu, and final layout that I sent to them. I also had a question regarding the storage of my utensils, which had me concerned that I had to store them at a commissary.

I received a green light on everything - including the storage of the utensils. I will not be required to store them at a commissary. That is great news! All of the paperwork is now complete and the next step is the actual inspection.

All of the necessary equipment for the mobile kitchen has been ordered and I should be ready to test the kitchen within the next couple of weeks if the weather allows. I am hoping to schedule the inspection in early/mid May.

This smoker is not for the faint of heart! The smoker weighs in at 1390 lbs and requires a trailer to haul it around. Lang is very flexible and there are other mobile or permanent options to choose from.

If you are planning to cater or vend your BBQ, you will need to store your cold items (meats, eggs, etc.) in an approved cold storage container.

A Cambro is considered an approved cold storage container, but it is limited to only 4 hours of use, which means that your license certification will also be limited to 4 hours. That makes doing BBQ a bit difficult. In order to prevent the 4 hour limitation, you need a commercially approved, mechanical, refrigerator. By mechanical, we mean a unit that also contains a fan.

After doing some research, I checked into this little fridge and found out that is approved for catering and vending in a mobile unit.

This is a delicious recipe that can be used as the main entrée in your dinner or as a nice meal for lunch. If you are into low carb, then think about giving this one a try.

This recipe will stuff one half of a pork loin with cream cheese, spinach, onion, bacon bits, and just the right amount of herbs. We then wrap the entire pork loin in a bacon weave - and drizzle on a little maple syrup for that pop factor as an option!

This was easy to prepare but it requires a bacon weave, so if you have never made a bacon weave, then you will want to do a little homework or check out my other albums where I explain how to make one.

Took the afternoon off from work today to prep the "Black Flame" for the season. This involves cleaning the smoker and then getting it very hot and spraying a cooking oil mix into the smoker.

The oil bonds with the metal and creates a nice coating similar to the process used on cast iron cookware. Going to remove the jacks off the frame tomorrow and place the tires back on the ground.

MOBILE LICENSE UPDATE:

I was given the green light on my mobile kitchen layout, so I began the process of getting the final equipment necessary to setup the kitchen for some test runs.

I've submitted the paperwork to Summit County and I'm waiting for some feedback, which should come soon

One of the challenges in setting up a portable kitchen is the requirement for a three sink system as well as a hand sink. The 4 sink system you see in this photo has been approved for use.

It's easy to carry and it's portable.

I have been very busy over the past several months with the job that pays the rent and haven't had a chance to post as much as I would have liked.

I am currently working on getting my food license certification and this deadline has now crept up on me. I have been setting up my kitchen for the final design. I am going to create a set of videos on this whole process as I go through it and will post them once I am done.

If everything works out as planned, I will have a mobile, certified kitchen capable of selling BBQ in any county in Ohio. The toughest part of this process is getting all of the items required to meet the certification requirements.

Not far behind is the ability to transport all of the equipment for the kitchen. I have all of the items defined and I've placed a picture of my layout on the page for your review. I am waiting for approval before I finalize the equipment purchases, but if this layout is approved, I will get the remaining items and then start testing the kitchen to make sure all is well.

The final step is sending in the paperwork, having the inspection, and getting certified. Fingers crossed!

I picked up a couple of these stainless bacon racks while on vacation last year and I couldn't be more pleased with the results. I get a double boost of love using these racks:

Your pit racks remain clean for the big meats.

You capture the bacon grease rather than lose it in the pit. That grease can be used in many different flavoring profiles.

I noticed that Home Depot offers them and you can find them on Amazon as well. They are around 15.00 and worth the price.

I was asked recently what I liked most about "BBQing".

Barbeque (BBQ) is used both as a noun and a verb. Barbeque is said to come from the Spanish word Barbacoa, which describes meat being slow cooked in a hole in the ground or over an open flame. The process of slow cooking the meat has also been defined as Barbeque, which gives us the verb use of the word.

Some pit masters may not recognize BBQ as a verb. BBQ is simply the meat or the products that have been prepared by working the pit. And some pit masters may consider grilling up hamburgers on a charcoal or propane grill as "grilling", not "BBQing". Placing a hamburger over an open flame gets you close to BBQ, but it is not a slow cooking process and therefore not the proper use of the word.

What I like most about the concept of "BBQ" is the process and I am going to bet this is true for most of the pitmasters out there.

Prepping the smoker, planning the meats and sides you will be cooking, orchestrating the cook, tending the fire (if you have a stick burner), choosing the rubs, choosing the sauces, trimming, basting, glazing, choosing the woods, setting out your tools, using that brand new knife or temp probe for the first time, and the list goes on. The byproduct of all the hard work is the smiles on the faces of those who like the end result - ourselves included!

Want to know how to stay warm on such a cold day?

Throw some Hickory logs into the firebox of your smoker and light it up! Toss some spares or a fatty on those racks and let your ol' buddy warm your bones! And you'll get a great meal out of it too!
