Anyone familiar with Guthrie's Chicken?

They're opening a new one soon on Nevada in South Colorado Springs. I'd never heard of it, but this franchise has apparently been around for a long time.

"Guthrie's is an Alabama-based fast-casual restaurant chain widely credited as the pioneer of the chicken finger-only restaurant. Founded in 1965 in Haleyville, Alabama, the brand revolutionized the fast-food industry in 1982 by stripping burgers from its menu to focus exclusively on chicken fingers, fries, coleslaw, Texas toast, and their legendary signature dipping sauce."

Today, Tuesday, June 9, the Colorado Springs Pioneer Museum is hosting its "Food Truck Tuesday" event from 11 a.m. to 1:30 p.m.

This popular weekly offering will feature twelve rotating food trucks serving a variety of meals, snacks, and treats every Tuesday in Alamo Square Park through August ⁠25.⁠

On Food Truck Tuesday on June 2, the following trucks were on site: ⁠

Has anyone else been following the show Hometown: Inn This Together on HGTV/MAX?

Our family recently started watching more of Ben and Erin Napier's home renovations on their HGTV show and then this new show popped up about Ben & Erin's good friends building a hotel in downtown Laurel. Well, to make a long story short, the hotel (The Heirloom) was finally in its homestretch of completion, with reservations lined up and lots of anticipation for the future of the hotel and downtown Laurel, when a fire struck the building and burned it all away. 🔥 😫

I was listening to the Heirloom podcast this afternoon and the two hotel owners, Josh Nowell and Jim Rasberry, talked about their hard work and heartbreak after the fire. They offered up a little comedy to bring some levity to their situation, Josh said they were sitting in Jim's burned up office and Jim looked at him and said, "Well, we always said we wanted to build another hotel, we just didn't know it would be in the same spot." 😆

I love how these friends will continue to come together and persevere through adversity to build a lasting legacy. And they know that that legacy is not in the buildings they've built, but in the friendships they've created and sustained and the children that they're raising. ❤️

Have you visited the giant Scheels store off Interquest Parkway? We finally went yesterday and our kids rode the giant ferris wheel inside the store for $1 each. We checked out their clothes, shoes, home goods, sporting goods, candy store, fudge shop, snack bar, ice cream counter, toy store and mini bowling alley. What a place!!

Colorado Springs friends 👀

Have you been up to the Will Rogers Shrine to visit? It's located 1.4 miles up a switchback road above the Cheyenne Mountain Zoo. You do have to purchase a Zoo ticket to visit.

This historic monument was built by Spencer Penrose between 1934 and 1937, it stands dedicated to Will Rogers, who died in a plane crash in 1935. The elevation of the Will Rogers Shrine is 8,136 feet on the top deck and provides breathtaking views of Colorado Springs, the Pikes Peak Region and Eastern Plains.

⏰ Shrine Hours:
Open Tuesdays – Saturdays, from 9 – 4 p.m. (last Ride to the Shrine guided tour starts at 2 p.m.)
Closed on all Sundays & Mondays.

Cost to visit the Shrine:
– Your Zoo admission includes a drive to the Will Rogers Shrine of the Sun for that day, whether you choose to visit the Zoo or not.
– You must have paid Zoo admission for each person going up to the Shrine. Advance timed Zoo tickets are required.
- If you visit the zoo on a Sunday or Monday, you can come back to see the shrine on a different day when the shrine is open, within two weeks of your zoo visit.

Colorado Springs friends 👀

🐎 Have you been looking for a spot to check out some horse riding and roping? We visited Latigo, out in Falcon, this morning and enjoyed lunch from their on-site restaurant, the Buck & Blue's Grill. You have to try their homemade mud pie! We enjoyed our food to-go and sat upstairs at a table overlooking the rodeo arena, we observed kids competing in horse slolom and roping while we tried their brisket quesadilla and chicken club sandwich with bacon.

The Latigo events center also has a large horse supply store and historic memorabilia on the walls. Recommend! ⭐
