In New York they call them chopped cheese sandwiches. In Iowa they have the maid-rite. Others call it a cheese grinder. At Grand Junction Elks Lodge BPOE 575 this Friday we call them Colorado CHOPPED CHEESE SANDOS. They are simple, beefy, cheesy, and definitely delicious. They are a staple on the East Coast street food scene and loved in pubs and bars all across this great nation.
