What a pleasure to serve the supporters of The Baldwin Center’s 2026 gala tonight. I took no pictures, but there was a photographer! Perhaps I will post a photo or two of my simple vegan spread of samples:
-lions mane mushroom salad with fennel and red cabbage and a tiny tomato
-perfect bites:
-raddish, date, almond, Goji, cranberry and hot honey.
-vegan Snackery cups: carrot and raddish chips, sliced beet and onion jam
-vegan sweet and salty skewers with fermented Greek olives, cantaloupe and honeydew with crunchy red cabbage

All served with a tasting of our bloody mindful mocktail, with adaptogenic booze free spirits to liven the body and add sweetness and spice. Tonight I served with hot honey drizzle and fermented daikon raddish
—and tonight I created a new menu item:
The Baldwin Center Bite
Raddish again. It is the perfect chip and vegetable.
A slice of fermented horseradish pickles
A dab of carmelized onion jam
A Blueberry.

It was all surprisingly wonderful and a blessing to be part of. 🙏
