🍲✨ Mole de Olla — A Traditional Taste You Rarely Find
Born in the heart of Mexico’s countryside, this beef-and-vegetable stew dates back to pre-Hispanic times, when families gathered around clay pots with chiles, herbs and fresh vegetables. Later, the Spanish influence added beef, garlic and additional spices — creating the version we know today.
It’s especially popular in Central Mexico — in states like Estado de México, Hidalgo, Puebla and Tlaxcala — where households serve it year-round, despite warm weather, because it’s seen as hearty, nourishing and full of home-style flavor. 
Our version stays true to its roots — tender beef, corn, zucchini, carrots, green beans and the highlight: chochoyotes — tiny tamal-like masa bites shaped like mini cazuelas that soak up the rich broth.
It’s not spicy, just full of deep, homemade flavor (salsa available for those who like a little heat 🌶️). .
