Not all proteins are the same cut.

Choosing a farm-raised protein is simpler than a butcher's counter makes it look. Let us walk you through it.

Start with fat and flavor. Animals raised on pasture carry their fat differently than conventional meat, and they taste different too. Setting that expectation before you turn on the stove makes a real difference.
