Sorry for the long Haitus !

Spring 2021 is around the corner and I read an interesting article today posted this week on South China Morning Post about the origins of The famous Hainanese Chicken Rice.

Hainanese chicken rice is a dish of poached chicken and seasoned rice, served with chilli sauce and usually with cucumber garnishes. It was created by immigrants from Hainan in southern China and adapted from the Hainanese dish Wenchang chicken.

Laksa is a spicy noodle soup popular in Peranakan cuisine Laksa consists of thick wheat noodles or rice vermicelli with chicken, prawn or fish, served in spicy soup based on either rich and spicy curry coconut milk or on sour asam. Laksa is found in Indonesia Malaysia, Singapore, and Southern Thailand.

This year, Chinese New Year - The Year of the Pig - begins on Tuesday, February 5,2019 and lasts until February 20th, 2019. Secret Recipe Plano will be serving Yu Sheng (Prosperity Toss) or also known as lo hei is a Teochew-style smoked salmon salad. It will consists of strips of smoked salmon, mixed with shredded vegetables and a variety of sauces and condiments, among other ingredients.

Yusheng literally means "raw fish" but since "fish (魚)" is commonly conflated with "abundance (余)", Yúshēng is interpreted as a homophone for Yúshēng meaning an increase in abundance. Therefore, yu-sheng is considered a symbol of abundance, prosperity and vigor.

Secret Recipe Plano will be offering Fa Choy Yu-Sheng from February 3rd, 2018 and while stock last!

This year, Chinese New Year - The Year of the Rooster - begins on Saturday January 28,2017 and lasts until February 15th, 2018.

Each Chinese New Year is characterized by one of 12 animals which appear in the Chinese zodiac. The Chinese zodiac is divided into 12 blocks (or houses) just like its western counterpart, but with the major difference being that each house has a time-length of one year instead of one month.

This year it's the Year of the Rooster, the tenth animal in the cycle. The next Year of the Rooster will be in 2029.

It was incredibly cold last weekend––even though the home electric heaters were cranking non-stop!

Hot Pot (also known as steamboat in Indonesia, Singapore, Malaysia, Thailand, China and Taiwan refers to several East Asian varieties of stew, consisting of a simmering metal pot of stock at the center of the dining table.

While the Hot Pot is kept simmering, ingredients are placed into the pot and are cooked at the table. Typical hot pot dishes include thinly sliced meat, leafy vegetables, mushrooms, wontons, egg dumplings, tofu, and seafood. The cooked food is usually eaten with a dipping sauce. Hot pot meals are usually eaten in the winterr during supper time.

Taiwanese Hot Pot usually is called 火鍋 in Mandarin or Taiwanese, but is also called shabu-shabu when the hotpot is Japanese style Hotpot, ie. shabu-shabu, due to Japanese influence.It is very common to eat the food with a dipping sauce consisting of shacha sauce and raw egg yolk.

In Thailand, Hotpot is called Thai suki, although it is quite different from the Japanese shabu-shabu variation called sukiyaki. Originally a Chinese-style hot pot, the number of ingredients to choose from was greatly increased and a Thai-style dipping sauce with chili sauce, chilli, lime, and coriander leaves was added.

In Vietnam, a Hot pot is called lẩu or cù lao, and the sour soup called canh chua is often cooked in Hot pot style (called lẩu canh chua). The generic term for a salted fish hot pot is lẩu mắm.

Red Snapper Fish Head Curry is a dish of relative popularity among Malaysians and Singaporeans , although it is generally not categorized as cheap hawker fare. A typical fish head curry served in a claypot costs between US$10-20 and some of the best can be found in hawker centres and neighbourhood food stalls.The origins of the modern dish began in Singapore, with a chef wanting his South Indian-style food to cater to a wider clientele, notably Chinese customers who considered fish head a special delicacy. Today, restaurants of not only Indian, but Malay, Chinese and Peranakan associations serve variations of this dish.

Tamarind (asam) juice is frequently added to the gravy to give it a sweet-sour taste (see asam fish); this variety of fish head curry normally has a thinner, orange gravy. Additionally, a certain amount of coconut milk is often used in the curry.

The Chinese lunar calendar is associated with the Chinese zodiac, which has 12 animal signs: 2016 is a year of the Monkey.

Ais kacang, literally meaning "ice beans", also commonly known as ABC (acronym for Air Batu Campur, meaning "mixed ice"), is a Malaysian dessert which is also common in Singapore (where it is called ice kacang) and Brunei.

Traditionally, an ice shaving machine is used to churn out the shaved ice used in the dessert, originally hand cranked but now more often motorized. Many Southeast Asian coffee shops, hawker centres, and food courts offer this dessert.

The first is more of a Thai influence using mango slivers with other shredded veges served with crispy chicken and a sweet spicy sauce. Autumn Festival is this week, lets welcome the cool weather at North Texas with a celebration of P**n Choi.

P**n Choi also known as pun choi or Big Bowl Feast, is a traditional type of dish originating from Hong Kong village Cantonese cuisine. It may also be found in different parts of Hong Kong. It is served in wooden, porcelain or metal basins due to its size and communal style of consumption.

It was said that P**n Choi was invented during the late Song Dynasty. When Mongol troops invaded Song China, the young Emperor fled to the area around Guangdong Province and Hong Kong.

P**n Choi includes ingredients such as pork, beef, lamb, chicken, duck, abalone, ginseng, shark fin, fish maw, prawn, crab, dried mushroom, fishballs, squid, dried eel, dried shrimp, pigskin, beancurd and Chinese radish.

A traditional P**n Choi is served in a big wooden basin, each table has a basin of P**n Choi, and every person at the table takes food from the basin. Traditionally, people eat P**n Choi layer by layer, from the top to the bottom.

You can order this special dish from Secret Recipe - only available on weekends ( minimum 3 days of preperation) and each P**n Choi will serve 5-8 people.
