a farewell to roman + marlin

this isn’t goodbye ~ it’s a chance to raise a glass, share a table and say thank you to two of the best who helped make this place what it is today…

before good fortune was even a shell of what it is now alex met roman outside the space. it was an absolute disaster inside ~ floors torn up, walls tired, not a single thing ready to go. but we were so eager to start we decided why wait. let’s start making food the way we want. so we rolled into supper club pop ups all around town fueled by tireless nights and weeks of planning, sourcing and thrifting. between building diagrams, equipment lists, taste tests and even trips to new york and los angeles we chased a vision until the doors finally opened. roman poured his craft and soul into creating food that made people believe in what we were doing.

then came marlin hailing from columbus. we still remember the day he reached out ~ we couldn’t believe some of the places he worked, the timing of his move to canton and his eagerness to work with us. during the buildout we must’ve exchanged 30 emails hoping the timing would be perfect. and eventually it was. this gunslinger of quips, cocktails, music and art not only made his mark on the drinks but on the space itself ~ yes even that sick mf doom piece made by one of marlin’s friends

chef roman’s last day of service will be friday 8/15 and marlin’s will be saturday 8/16 marking the closing page of this chapter before we start the next
