Tonight I was talking about tamales, and I ended up thinking about my mom.

When I was little, she’d put me to work grinding corn, and man, I complained. Now I think about those moments and smile. Especially remembering how fast my complaints disappeared once it was time to eat. 😂

Back then, I was just helping make tamales. Today, I can see how much those little moments shaped my love for cooking and connected me to where I come from.

Funny how an ordinary day can become a memory you carry for years.

You’ve probably tried chicken, pork, or rajas tamales. But how about tamales de elote? Or tamales de frijol served alongside pipián?

Today I’m sharing a little of my Puebla roots, a childhood memory with my mom, and a combination you don’t often see on the usual Mexican restaurant menu here.

Food has always been personal to me. Sharing these traditions is another way to keep that connection going.

A couple of days ago, I bought tamales and was given a free champurrado. That little moment sent me thinking about another food I’d love to learn more about: chileatole.

That’s what I want Before We Forget to be about. The dishes, the people who made them, and the family versions we might never find written down.

Throwback Thursday took me back to JC’s. ❤️

I found this old footage and suddenly remembered the long days, the food coming out of the kitchen, our staff, and all the familiar faces walking through the door.

Our lives revolved around that restaurant for years. My family was there. Our staff felt like family. And so many of you became part of our story.

That chapter ended, but I’m grateful we got to live it. Burlington, if you were ever part of the JC’s days, thank you. We miss you.

I stopped by Bobo’s in Vernon Hills, a small restaurant I liked, and seeing it closed hit me harder than I expected.

When you’ve owned a restaurant, you know it’s never just a place with a menu. Somebody dreamed it up. Somebody took the risk, worked the long days, and hoped people would walk through those doors.

I don’t know their whole story, so I’m not going to pretend I know why they closed. It just reminded me how tough this business can be, especially when a small team is competing against companies with marketing budgets and resources they can only dream of.

If you’ve had to close a restaurant, please don’t let that ending convince you that you failed. Even making it six months means you showed up and fought for something difficult.

And if you’re dreaming of opening one, find someone who’s been through it. A mentor can sometimes see what you’re too close to notice and help you avoid mistakes they once made.

To everyone who’s ever taken a chance on a small business: I see you.

Some days, I still think about those years in Burlington and how much of our life happened inside that restaurant.

My kids grew up around it. My wife and I built our days around it. Our staff became like family, and so did so many of our customers. You weren’t just stopping by for a meal—you became part of our lives.

The way it ended hurt deeply. I don’t want to go into the details right now; maybe one day I will. I didn’t just lose a business partner. I lost a friend, and after feeling betrayed, I lost some of the drive I had to keep going.

But none of that takes away from what Burlington gave us. We miss the people, the conversations, the familiar faces, and the feeling of being part of the community. To everyone who welcomed us and supported us: thank you. Those memories still mean so much to my family and me. ❤️
