Grilled Shrimp Avocado Rice Bowls
Fresh, filling, and packed with flavor — perfect for lunch or dinner
🧺 Ingredients
For the shrimp
1 lb shrimp, peeled & deveined
2 tbsp olive oil
1 tbsp lemon or lime juice
2 cloves garlic, minced
1 tsp paprika
½ tsp cumin
½ tsp chili flakes (optional)
Salt & black pepper, to taste
For the bowl
2 cups cooked rice (white, brown, or jasmine)
2 ripe avocados, sliced
1 cup cherry tomatoes, halved
½ cup cucumber, diced
¼ cup red onion, thinly sliced
Fresh cilantro or parsley, chopped
Optional sauce (highly recommended)
½ cup Greek yogurt or dairy-free yogurt
1 tbsp olive oil
1 tbsp lemon juice
1 small garlic clove, grated
Salt, to taste
👩🍳 Instructions
1️⃣ Marinate the shrimp
In a bowl, combine olive oil, lemon juice, garlic, paprika, cumin, chili flakes, salt, and pepper. Add shrimp and toss to coat. Marinate for 10–15 minutes.
2️⃣ Grill the shrimp
Heat a grill pan or skillet over medium-high heat. Grill shrimp 2–3 minutes per side until pink, opaque, and lightly charred. Set aside.
3️⃣ Prepare the sauce
Mix all sauce ingredients in a small bowl until smooth. Chill until ready to use.
4️⃣ Assemble the bowls
Divide rice between bowls. Top with grilled shrimp, avocado slices, tomatoes, cucumber, and red onion.
5️⃣ Finish & serve
Drizzle with yogurt sauce, garnish with fresh herbs, and serve immediately.
