I decided to make Chicken Parmesan tonight (Thanksgiving Eve) since we get sick of Thanksgiving food after a while. This is my homemade Italian Tomato sauce. Yes, this is the one I made with Cowdrey Carryout with stuffed pasta shells, Chicken Parmesan, and Lasagna. Here is the recipe! Ohhhh I buy canned crushed tomatoes for this - I don’t use my fresh tomatoes. I did use my fresh carrots, onions and oregano & basil. Try something new! 7C6 Farm. ***note. I usually double, triple, quadruple this recipe when I make it. It stores in the freezer up to 6 months of you can pressure can this sauce and keep for very long storage!!

Break - Sabbatical - me time - whatever you want to call it, I need it. I have a lot going on, several projects, too many jobs and upcoming events. I need to take something off my list. Cooking for now is off my list. I will return - just not for a little while. As time permits, I will get in the kitchen and make big batches of something and I will post that as I get it done. I will let you know when I get back at it full time! Love y’all.

Sorry to say I’m going to have to go into quarantine for the next 10 days. No beef enchiladas tomorrow! Y’all can go see what is in the freezer!!! I will let you know when I’m back up and running

I was waiting to post my menu until I was sure I felt well enough to cook. No I do not have Covid, I have the same thing I get every single year during cotton harvest!

I’m only cooking three days the week
Tuesday: Italian Stuffed Shells
Wednesday: Chicken Spaghetti
Thursday: Beef Enchiladas

Large pan: $22
Small pan: $11
Individual: $5
Microwave individual with a side: $7

Day off from cooking? Not when you have a garden and it’s the end of the season. Putting up 6 gallons of carrots, roasting a bushel of beets, and dehydrating sage, rosemary and parsley!

50 pans of dressing, 15 green bean & corn casseroles, 13 pans of cranberry sauce,20 pans of sweet potato casseroles, 15 apple cranberry crisps, 10 pans of mashed potatoes, 21 dozen rolls, and 50 pies..... stick a fork in me. I’m done. I am so thankful for all of you. May you have a very blessed Thanksgiving!

Today is the last day to order Thanksgiving dishes for next week!
If you are like us, we have family coming to town. I’ve stocked the freezer so that you don’t have to have turkey all week long. There are Enchiladas (both beef and chicken) Chicken Spaghetti, Lasagna, Chicken & Wild Rice and some other goodies! Swing by Coffee Wizards and grab food for the whole week!
