Pineapple Cream Cheese Cake

Ingredients:
For the cake
2 cups all-purpose flour.
1 ½ cups granulated sugar.
1 ½ teaspoons baking soda.
1 teaspoon baking powder.
½ teaspoon salt.
1 teaspoon ground cinnamon optional.
2 large eggs.
1 cup vegetable oil.
1 teaspoon vanilla extract.
1 cup crushed pineapple with juice.
½ cup buttermilk or whole milk.
For the cream cheese frosting
8 oz cream cheese softened.
½ cup unsalted butter softened.
3 cups powdered sugar.
1 teaspoon vanilla extract.
2–3 tablespoons pineapple juice or milk.
Optional topping: pineapple chunks, toasted coconut, or chopped pecans.

Directions:
Preheat oven.
Heat oven to 350°F and grease cake pan.
Line base with parchment for easy removal.
Prepare dry ingredients.
Whisk flour, sugar, baking soda, baking powder, salt, and cinnamon in a large bowl.
Prepare wet ingredients.
Whisk eggs with oil and vanilla until smooth.
Stir in crushed pineapple with juice and buttermilk.
Combine.
Fold wet ingredients into dry until no streaks remain.
Transfer batter to prepared pan and smooth top.
Bake 30 to 35 minutes until golden and toothpick comes out clean.
Cool completely.
Make frosting.
Beat cream cheese and butter until smooth.
Gradually add powdered sugar, blend gently.
Stir in vanilla and pineapple juice or milk until creamy and spreadable.
Frost the cake.
Spread frosting evenly over cooled cake.
Optional: top with pineapple pieces, coconut, or pecans.
Chill briefly or serve immediately.
