Peach Cobbler Egg Rolls Recipe
Ingredients:
For Filling:
• 3 cups peeled and diced peaches (fresh or canned)
• 1/2 cup sugar
• 1/2 teaspoon cinnamon
• 1/4 teaspoon nutmeg
• 1 tablespoon cornstarch
• 2 tablespoons water
For Egg Roll Assembly:
• 12 egg roll wrappers
• 1 egg, beaten (for sealing)
For Frying:
• Oil for deep frying
For Vanilla Icing:
• 1 cup powdered sugar
• 2-3 tablespoons milk
• 1/2 teaspoon vanilla extract
For Caramel Sauce:
• 1 cup packed brown sugar
• 1/2 cup heavy cream
• 1/4 cup unsalted butter
• 1 teaspoon vanilla extract
Instructions:
Prepare Filling:
1. In a saucepan, combine peaches, sugar, cinnamon, and nutmeg over medium heat. Cook until peaches are soft and syrupy, about 10-15 minutes.
2. Mix cornstarch with water, then stir into the peach mixture. Cook for 2-3 more minutes to thicken. Set aside to cool.
Assemble Egg Rolls:
1. Place an egg roll wrapper on a clean surface, one corner facing you.
2. Add 2-3 tablespoons of peach filling in the center.
3. Fold the bottom corner over the filling, then fold in the side corners.
4. Roll tightly towards the remaining corner. Use beaten egg to seal.
Fry Egg Rolls:
1. Heat oil in a deep fryer or large skillet to 350°F (175°C).
2. Fry egg rolls in batches, turning occasionally, until golden (3-5 minutes). Drain on paper towels.
Prepare Vanilla Icing:
1. Whisk together powdered sugar, milk, and vanilla until smooth.
Prepare Caramel Sauce:
1. In a saucepan, combine brown sugar, heavy cream, and butter. Cook over low heat until the sugar is dissolved.
2. Remove from heat, add vanilla, and stir.
Serve:
1. Drizzle the warm egg rolls with vanilla icing and caramel sauce.
