I haven't made a post in a while, so I wanted to create a dish that warms the soul because the weather is changing. I immediately thought of chicken chili. I have never met a kid that didn't love tater tots, my girls saw me take them out of the freezer and went nuts! I'm sure they had no idea they were going to get this dish. Just the fact that they saw tater tots which they almost never have, gave them the impression that lunch would be awesome. What a healthy and different school lunch! Kids love anything wrapped in a tortilla, so I took advantage of my supply and decided to use ingredients I had on hand to make a lunch that sounded gourmet to give them the feeling that they got something really special. This dish was a light, but delicious Friday night meal. I had calamari and shrimp on had from a fried seafood feast I put together last weekend that I didn't use and decided to freeze. A sirloin roast was grilled and I needed to put together a very quick meal. I happen to have a couple of summer yellow squash that I had not used, a red onion, and a cabbage. This is the lunch that I made for my girls yesterday during their lunchtime for virtual school. Of course, I wanted to make something fun that resembled a school lunch but with a twist. They love Hot Pockets, which I do not buy often; and pizza, so I decided to combine the two and make an amazing lunch dish! I happened to have store-bought thin pizza dough, Italian sausage, mushrooms, onions, and pepperoni; which were the ingredients that I used to make this elevated lunch. [ 87 more words ]

Ok, for starters this mac-n-cheese was amazing! It was storming so I wanted to cook a meal that was comforting; there's nothing more comforting than pork chop and macaroni and cheese. The pork chop was broiled and glazed with my homemade BBQ sauce; the girls named the sauce Holy Sauce; it's that good! I broiled the chops for 7 min on both sides, glazed them with the Holy sauce and put them back in the oven on 500, and baked for an additional 5-7 minutes to set the sauce. [ 425 more words ]

This dish was HOT, HOT, HOT, forget spicy! It was not my intention to make it extremely hot, I knew it would be spicy, but people; it was so hot I could only take two bites. My husband and youngest daughter who is 10, absolutely loved this dish and got seconds. The shrimp and chicken had a very nice crunch even when tossed in the sauce because I dredged both lightly in corn starch and fried in corn oil. [ 122 more words ]
