Well⌠we hoped to announce an opening date in March. Hoped.
Yeah. About that. đ
These photos are the current state of the building. As you can see, she is⌠airy. Very open concept. Extremely committed to the âdeconstructedâ aesthetic.
When we moved here, a few kind locals gently warned us about the southern pace of things. We smiled politely. We nodded. We thought, âHow different can it be?â
Friends. We know now.
This is our reality, and honestly, weâre learning to embrace it.
The upside? Weâve uncovered some cool exposed brick. The space feels huge now that itâs wide open. You can finally see the scale of it. Squint your eyes a little and picture this with us: bar to the right, tasting room tucked into the back corner, wine glasses clinking, someone arguing passionately about cheese pairings.
Itâs coming. It will be there.
So weâre officially saying: 2026.
Weâre committed to a 2026 opening.
Or at least weâre committed to embracing the southern pace only as long as it doesnât delay wine and cheese with all of you for an unreasonable amount of time. There are limits.
In the meantime, real things are happening.
Weâve started meeting with food vendors.
Weâre testing recipes.
Weâre obsessing over lighting (we want moody and charming, but we are also now at the age where we complain if we canât read the menu because of âambiance,â so we promise youâll be able to see your menu).
Some pieces are moving slowly. Some are moving beautifully. All of it is moving toward something we care deeply about.
Weâre not just opening a place. Weâre putting roots down. Athens is our forever home, and weâre grateful youâre letting us build something here.
Thank you for being patient with us. We cannot wait to raise a glass with you in 2026. đˇđ§
