At Ume, freshness isn't a slogan — it's how we're built. Our co-owner Andy spent decades in seafood wholesale, so he knows exactly what to look for and hand-picks our fish himself. That means the salmon in your Psycho Roll, the tuna in your sashimi, the catch behind every roll — chosen by someone who's done this his whole life.
