Even though our cart is 80% smaller than full-size Food Trucks, we still have to have the same systems....Water, Gas and Electric service, food storage and waste water... just 80% smaller!

Here's a few specs on our cart, which is one of the most energy-efficient designs around:

Pet Name: We haven't named the cart yet, because we only had one great suggestion, but "Death Star" seems like a bad name for a food cart. Ideas? Comment below!

Electricity: Thanks to our on-board battery storage bank, We can run for up to 15 hours without plugging in or using a generator. Thanks to our 100% LED lighting and energy-efficient refrigeration, the cart uses the grid equivalent of 6.5 Amps per hour.

Gas: By carefully selecting efficient appliances, the cart (OK, now I really want to say "DEATH STAR," I admit it.) uses about 27,000 peak BTU's per hour, or about one-third to one-half the usage of one full-size gas grill. This enables us to get about 8 hours of operation from one 20# propane tank.

Water: Woof. Installing the plumbing took a bit (A TON) of work, but we now have an efficient system that can pump out 175 Degree water from our faucets nonstop! We don't have a lot of storage space, but we can apparently make hot chocolate for days on end!

Menu: Here comes the fun part. Our menu will rotate between several set menus with the occasional special menu, because if we see a new food item trending on social media, we will rush it onto the menu here in Akron (Why go to the trouble of becoming a Chef if I can't make and have tasty Pinterest-y things?) We want to be the place where you fulfill your Cronut, Avocado Toast, Ramen Burger dreams! Well, maybe not those specific items, but you get the idea!

At this point you may be asking why we went to all of this trouble to be "green" by creating this wonderful Death Star? (I mean Food Cart) First, it's the right thing to do, and second, we want to be very pricing-sensitive; If we save money, you save money.

How many back issues of The Devil Strip does it take to cover the inside of a street cart? A One, A Two....Seven! Add in about 80 yards of painter's tape and a few cuts and scrapes, but we're ready for paint! Can't wait till it dries so I can start the plumbing and electrical!!

Why Not Akron?

As we complete our street kitchen build-out in the shadow of our garage, others are moving forward with the City of Akron to work together to revise the protectionist street food ordinances that were put in place 5 years ago. I've linked their post below for your reading enjoyment.

Large sums are soon to be spent to revitalize Akron's downtown district, but one of the limiting factors in this plan is a dearth of pre-existing retail spaces in areas of downtown that currently demand retail growth.

People considering living in or visiting Downtown Akron require a critical mass of suitable shops and eating/drinking places. Mobile and street vendors can help to bridge the existing gap at no expense to the public if given the ability to do so.

Once an area's capacity to support additional traditional retail space is proven in this manner, retail and residential development will blossom for years to come.

It's time to begin to tell the story of our new sidewalk cart as it makes its way through the refurbishing and outfitting process here in Akron!

In October 2016, we came across our NYC style sidewalk cart, which was advertised for sale in Altoona, PA. It appeared to be in good condition and was minimally used; Built entirely from stainless steel, the body was rust and dent free. Everything looked good in the pics!

Once we had agreed on price, arrangements were made to get to Pennsylvania to pick up the cart. We rented truck and trailer, and I got on the road. On arrival, I learned that the cart was parked 50 yards off the road in tall grass with all the doors locked and no key. After immediately regretting not bringing help with me, I got to the task of pulling the 1000+ pound trailer up the hill to the street with the seller's help so it could be loaded onto the trailer. After 45 minutes, the trailer was on the street and winched up onto the trailer. After a quick stop for cargo straps and bracing materials, we were on the way home.

Once we arrived home and got a little sleep, I took a pair of bolt cutters to the main door and discovered the cart was half-full of well, everything. We found everything from propane steamers to boxes of unused steam table pans and propane bottles to a waterlogged life vest! Once we got everything cleaned out, we found that the pictures on which we based our purchase were completely accurate! The cart was straight, clean and apparently sold with half the cooking equipment we needed to run the cart! I'll add a few pics of the extraction with this post to get us started. Our next post will show some close-ups and interior shots.

We are planning a small Kickstarter campaign in the next few weeks in order to finish the daunting task of meeting Health Department requirements as well as to get to know as many of our future customers and friends as possible. Watch this, get the attached recipe, make this bread. Follow the shaping instruction in the video - It's super important to keep the crumb nice and light!! Please note that they cut the bread too quickly in the video and it pulled away from the crust; Let it rest until fully cooled! You can also bake this recipe in a springform pan at 450 degrees for the initial bake, then drop the temp for the finishing bake. You will never buy "artisan" bread for $5/loaf again - You'll make it for $0.50/loaf!

After months of hard work, I'm pleased to announce that we are currently building out a Ramen Street Cart for all of your Ramen wishes!

Designed to fit nicely on City sidewalks and totally wrapped in stainless steel, it can operate in temperatures above 15 degrees, so about 11 months per year here in Akron! I will post some pics and keep all of you updated on our progress!

Next step from here is our preliminary Summit County health inspection - Wish us luck! Share this post so that we can get some buzz going about this exciting new addition to the Akron food scene!
