Learn about tea from leaf to cup. Explore how geography, culture, climate and processing transforms a humble leaf into the wide variety of teas enjoyed around the world. Taste green, oolong and oxidized varieties and learn about the terminology and taxonomy used to describe them.

Workshop begins at 10:30 in the garden at Horta Culture and will include a tea tasting.

Lazy Sundays are better with tea. This afternoon I’m enjoying a lightly roasted Tieguanyin from Anxi China. Earthy vegetal notes are complimented by the sweet aroma of chestnuts and orchids.

The scholar’s white tea of Mt. Taimu, Baihao Yinzhen. This beloved style is named for the silvery duvet that coats its young buds.

Notes of sweet grass and wild sage are shrouded in honey-like sweetness. Subtle and poetic, this tea truly does deserve scholarship.

Tea and flowers, two of my favorite things! 😻

This afternoon I am sampling a 2021 Yame Gyokuro Japanese green tea. This style represents the pinnacle of Japanese looseleaf green tea production and therefore only features the highest quality spring tea buds. Like matcha, the leaves of this tea are shaded for three weeks to maximize chlorophyll production and deepen the rich umami flavor profile. The leaves are so tender and flavorful, they can be consumed after the steeping process is complete with a splash of soy sauce. Yum!
