In 2018 the restaurant is possibly experienced by more tourists than locals, at bit like the BridgeClimb or that wildlife park in Darling Harbour. Tetsuya's is way more appealing than an atrium of sad koalas, though.

The 1988 edition of The Sydney Morning Herald Good Food Guide mentions a strange but exciting "kind of nouvelle cuisine" that was appearing at a new place called Ultimo's. "It comes as no surprise," said the Guide, "that the cook is in fact Japanese."

Penrith truffles, hang on, what? "Just kidding, they're from Manjimup in Western Australia." Food critic Leo Schofield praised Wakuda's skilful cooking when the venue opened in Rozelle, describing it "as good tasting as you'll find in any of the city's best BYOs, with the exception of Claude's".

"Tetsuya Wakuda fuses refined Japanese and classic French cuisines in this small but impeccably run and maintained Rozelle restaurant," he wrote at the time in The Sydney Morning Herald.

​Tetsuya Wakuda expands to the US with opening of Las Vegas restaurant
Two-hatted Sydney fine-dining restaurant Tetsuya's will close next year, ending a 22-year run at its Kent Street home in the CBD.

The Tetsuya's story actually began even earlier, in 1989, when a young Japanese chef, Tetsuya Wakuda, opened his eponymous restaurant in Rozelle, relocating to the city in November 2000.
