สุทธิเริ่มต้นมาจากอาหารที่เป็นส่วนหนึ่งของมื้อกลางวันพนักงานของเรา
สมาชิกหลายคนในบ้านหลังนี้อพยพมาจากรัฐฉาน หรือเติบโตขึ้นมาในครอบครัวที่มีรากมาจากรัฐฉาน อาหารจาก “บ้าน” ของพวกเขาจึงค่อยๆ กลายมาเป็นส่วนหนึ่งของครัวแห่งนี้
สูตรอาหารและรสชาติจากเมืองที่พวกเขาเคยอาศัย โต๊ะอาหารในครอบครัว และร้านอาหารเล็กๆ ที่พวกเขาคุ้นเคย จึงเดินทางมาสู่ครัวของเรา กลายเป็นอาหารเรียบง่ายที่ปรุงอย่างพิถีพิถัน เพื่อหล่อเลี้ยงผู้คนจริงๆ ในชีวิตประจำวัน
สุทธิคือการรวมตัวของอาหารจากรัฐฉาน ล้านนา และดินแดนชายแดน ที่รสชาติเดินทางมาพร้อมกับผู้คนตั้งแต่อดีต และยังคงดำเนินต่อมาจนถึงทุกวันนี้

Many of the dishes on this menu have long been part of our daily staff lunches, food cooked without ceremony, remembered recipes from home and continued here in our kitchen. As many of our team come from the Shan States, or are descended from families rooted there, their cooking naturally became part of the rhythm of the kitchen. Over time, recipes from villages, family tables, and roadside kitchens travelled into ours.
What we offer here is not a historical collection nor a polished interpretation, but simple food still alive in everyday life, made to nourish the people around the table.
Suthi is a gathering of these flavours: northern Thai, Shan, and borderland traditions carried into the present day.
