It was a halcyon period at Indochina. Saigon was the capital of the French colony in Cochinchina. The "Beautiful Era" flourished and Gallic ingredients were added to Vietnamese cuisine but still maintained its authentic flavor and taste. Along with the growth of Saigon as a city, there spawned a stunning young lady, Hoa Ly, who later married the son of the French Governor of Laos. Being a direct d

escendant of one of the co-founders of Cao Dai Dynasty and the daughter-in-law of the governor, Hoa Ly was fortunate to see and experience the lavish social life of the era. Developed a passion for cooking, she was keen to observe how dishes were prepared before served. This passion makes up what was known today as Le Dalat Restaurant. The beauty and prosperity of that era was reflected today in the restaurant situated at the very heart of Bangkok City. The atmosphere and intricacy of its interior design and architecture brings forth the artistry and creativity developed in that period. The fading photographs and paintings on the wall are living testaments of how one woman with passion can do so much in her time and positively affect the future. Le Dalat is a tribute to Madame Hoa Ly.

For Micky, our General Manager, there is no higher compliment a guest could give.

When he officially stepped into Le Dalat 14 years ago, he wasn’t just taking on a business. He was taking on the responsibility of protecting his grandmother's deep love for Vietnam and its splendid cuisine.

Here is what it actually takes to keep a nearly 50-year-old legacy alive:
1. The Hard Lesson: Early on, Micky believed that protecting Le Dalat’s quality meant he had to supervise every single detail himself. But as the restaurant expanded, he learned that true consistency doesn't come from micromanaging. It comes from trusting your people, training them well, and letting them take ownership.

2.The Uncompromising Standard: While we have embraced new technology behind the scenes, the soul of the food remains untouched. We still import our essential ingredients directly from Vietnam to guarantee total authenticity.

3. The Ultimate Goal: The team is united by one shared dream: to ensure Le Dalat remains an incomparable dining experience, driven by warm, personal service.

P’A has been with us for 20 years. When we asked him what makes the Le Dalat experience special, he didn’t talk about fancy techniques. He simply said that everything here is prepared with "sincerity and care."

That philosophy extends to every glass we pour. Whether it's a refreshing Vietnamese iced coffee to wake you up, or a perfectly crafted cocktail to help you unwind, P’A and our team know that a great drink is about more than ingredients. It's about anticipation. It’s about creating a moment of comfort. P'A remembers when his relationship with our regular guests started with just a simple greeting. 40 years. That’s how long P’Vee has been perfecting his craft in the Le Dalat kitchen.

If you’ve ever ordered our signature Nem Nuong (chargrilled pork balls), you aren’t just tasting a recipe from a book. You are tasting a 40-year legacy. During his very first week, P'Vee learned how to make this exact dish side-by-side with our original founder, Madame Ly. He spent two full months doing nothing but perfecting the cooking time until he got it exactly right.

Today, he still brings that same obsession to the kitchen ensuring every dish is as authentic and delicious as it was on day one.

She’s been memorizing your orders since 1989 💭

In the restaurant industry, "service" is doing a job. But for P'Thip, it’s always been something much deeper.
She joined Le Dalat in 1989, back when the restaurant was small and everyone did everything. Over the last 36 years, she hasn’t just watched the restaurant grow… she’s watched you grow.
When we asked her about our memorable guests, she didn't talk about VIPs or sales. She simply said:

“We know what they like. We know what they prefer. It stops being just staff and customer... it becomes family”

That’s the difference. When P'Thip remembers your favorite table or that you prefer your sauce on the side, it’s not because she memorized a database.
It’s because you’re family.
