Bottled directly from freshly pressed moromi without heat treatment, it preserves live enzymes and microorganisms, creating a fresh, complex flavour rarely found in commercial shoyu.

Naturally fermented in traditional cedar wood barrels using organic Japanese soybeans, wheat, and salt — perfect with fresh sashimi. 🍣🥢
