Las Margaritas Pacamara from Huila, Colombia opens the pairing with depth and amplitude. Expect ripe red fruit and soft florals layered over a rounded, almost nectar-like sweetness. The Pacamara variety gives the cup breadth and texture, allowing the fruit to feel generous yet composed. It’s a coffee that unfolds steadily, revealing more as it cools.

This coffee comes from Sirinya Mae Suai, a family-run farm led by Supon “Goh” Chaosuwanvilai. Supon’s approach is shaped by a long-held pursuit of theology, guiding him to see coffee as a practical way to serve his community through shared knowledge, care, and long-term growth.

We chose this lot not only for its quality, but for what it represents. Asian-grown coffees are often unfairly positioned against more established producing regions. Supporting producers like Supon allows us to help shift that perspective, and to stand behind work that builds progress collectively rather than individually.

In the cup, expect a lifted red-fruit brightness, settling into gentle sweetness, with a soft, lightly floral finish that feels composed and unforced.
