In this episode of Cooking with Grandma, Aunty Vivien settles the big kitchen mystery for us once and for all!

It all comes down to the ingredients we use. In a proper Peranakan Chap Chye, we use a lot of dry goods like dried mushrooms, black fungus, tau kee, and tang hoon. Even though we soak them before cooking, they act like little sponges.

Aunty Vivien explains that if you eat the dish the same day it’s cooked, the ingredients haven't had enough time to fully absorb all that delicious, savory gravy. But if you keep it for one day, all those ingredients soak up the tasty juices until they are absolutely bursting with flavor! 🍲✨
