Oaks Coffee @ Upper Thomson

I stumbled upon this place and wanted to try out their coffee.
By far it’s one of the better cafe’s I’ve had. Most cafes have been over-extracting and serving very strong coffees, but this one was extremely well-balanced.

Had their Shakshouka and it was a solid 8.5/10 too!

I think it’s better tasting than oatmilk (which tastes like cardboard to me), with a malty, nutty taste. Personally I struggle with plant-based milks especially with latte art and mouthfeel. I would recommend that you try it for yourself, and see if you like it! As all plant-based milks are pretty acquired tastes….

sg is selling their cold white coffees on their website, they do islandwide delivery week to week so be sure to get it while you can!

Hi guys! Sorry for not posting in recent months. Pandemic has been rough on us all. As things ease up I hope to share more coffee/cafe related stuff with you!

As a less coffee related post, my friend started importing matcha from Japan, feel free to check out his page here, .sg

For my homemade matcha latte, I used 3g of matcha to 30g of water, and topped it off with about 130ml of milk.

You can do this either hot or cold at home! I strongly recommend matcha’s as a rainy day drink.

Hello everyone! Hope you are safe and well.

Today I’m brewing a Finca Nuguo Gesha roasted by Compound Coffee Co. . Originally roasted for the 2020 National Brewer’s cup, they have released this coffee in a very limited quantity. Loving the aroma and notes of this coffee, without a very heavy body. Check them out for their wide selection of beans!

I’m also posting this to introduce my Origami dripper which I bought from Homeground Coffee Roasters. 1 year on I have decided to change my dripper, from a plastic V60 to this.

Why? Because I found that some of my coffee’s taste better when using Kalita flat bed papers than compared to a V60, so this dripper allows me to change between the two. (And it looks pretty damn good)

Having some fun at home brewing limited runs of coffee from different roasters!

Here I’m brewing a Finca Lerida Gesha roasted by Tiong Hoe Specialty Coffee . If you do not know, Panama Gesha beans are really growing in popularity and their prices can run a little high.

Originally farmed in Ethiopia, they were brought over to Panama and grown, eventually winning many barista competitions around the world.

Please continue to support cafes by checking out their websites to buy beans. These would help ensure they stay for the long run through this crisis!

THE AEROPRESS METHOD

I love the aeropress, it was my first home brewing equipment, and 2 years on, I still find myself using it!

Why?
• It’s a simple and fast brewing method.
• The fixed volume of the Aeropress ensures that you won’t get your brew ratio wrong.
• Cheap and super easy to clean

Now let’s talk brewing
1. You will need hot water, the aeropress, a cup, a spoon/stirrer, ground coffee and a scale (optional).
If you do not have a scale, use the scoop provided with the aeropress, it will give you about 18-20g each time.
No grinder? Ask your roaster to grind your beans when you purchase it! Tell them it’s for aeropress and most of them should help you sort it out. (If you’re just starting out, don’t worry too much about grinding your beans fresh, use a ziploc bag or a airtight container and it should last 1-2weeks before you notice any difference)

2. I like to flip the aeropress around and add the coffee in. Pre-heat your aeropress and cup by putting a bit of hot water and leave it for about 1min. Install the two parts together and put it on your scale. Put your ground coffee in the aeropress. Add your hot water and give it a stir with your spoon. Now wait till about the 1 minute mark. Give it another stir, and cover it with your filter and filter cap.

3. Invert the aeropress onto your cup (NOT ON YOUR SCALE!) and press. Aim to press all the liquid through at about 30-45 seconds.

4. Enjoy! Drink the coffee, and try it after it cools down a bit. Great beans taste best at about 60-70degrees, so let it cool for abit before you drink it.

Now there are many brew methods and many online roasters in Singapore. During this time let’s by buying beans and learning how to brew at home! This way we can help ensure the cafes we love stay around for the long run!

Given the current situations, the next month or so, I will be doing my best to post about local roasters that you maybe interested in for your home brewing needs.

My package arrived today, got to try their Samaria espresso beans which had good layers of flavour, particularly dried currants and chocolate.

If you’re interested in the Vacuum jar or latte cup, head over to to get them. They carry a wide range of which by far are the highest quality coffee stuff I use.

These are some difficult times for small businesses especially in specialty coffee, so let’s do what we can to get through this diffuclt period together! 🙂 @ Singapore
