This is the most interesting twist. When Europeans came to America, there were SO many lobsters in the sea that they washed up on the beach in piles 2 feet high.
In America in the 1600s-1800s, lobster was considered trash food. Servants and prisoners were fed lobster every day, and they protested in court saying they don't want to eat lobster more than 3 times a week. Farmers used lobster as fertilizer for their fields.

This is interesting - 200 years ago, lobster was considered poor man's food! In America, prisoners were fed lobster every day and they protested. It was so cheap that it was used as fertilizer. But when railways came, chefs in big cities tasted it, cooked it with butter, and suddenly lobster became the most expensive dish in the world. From jail food to royal food - that's the real journey of lobster.
