🐟TUNA OF THE AZORES IN PUCCIA BREAD!🥖Puccia bread is a traditional southern Italian bread specifically from Puglia made with semola wheat and bit of potatoes and off course olive oil! I fall in love with sourdough (levain) bread making thanks to Giuliano Pediconi when I visited him in the Mulino Mariani. During the months of lockdown I created my first mother yeast and had time for practice: look at my oldest photos for inspiration. Tuna of the Azores brought me back to Tokyo, where I worked for 3 years, thanks to it’s freshness, great quality and rich flavor.
Puccia with tuna, stracciatella cheese(the creamy heart of the burrata) and my home made pesto genovese recipe are the perfect combination of flavors for THE greedy fish panino you will never forget!

I just love ❤️chestnuts!!! I just want to share with you a simple way to have a great result at your home:🌰
-Preheat the oven 225 C
-wash & dry the chestnuts
-whit a small knife score🔪 (first and second skin) for 3/4 of the circumference avoiding the flat side
- place a thick layer of rock salt in the baking try and an aluminum foil on top of it
- place the chestnuts with the cut facing up⬆️
-make sure the oven reached the temperature💥 (light off😎)
-bake around 15/20 minutes!!!
Easy to peel and not dry at all enjoy😋😋!
