Grilled Picanha
Thick, juicy Picanha steak, seasoned with Pitt Bros Charr’d, grilled over charcoal, and basted with rosemary butter until smoky, tender, and full of flavor. 🇧🇷🥩



Recipe:
• 1 whole Picanha (top sirloin cap, fat on)
• Pitt Bros Charr’d seasoning (or your favorite smoky rub)
• 3 tbsp butter
• 2 sprigs fresh rosemary
• Olive oil



Method:
1. Score the fat cap lightly and rub Picanha generously with Pitt Bros Charr’d seasoning & a drizzle of olive oil.
2. Heat grill to high, then sear fat-side down until golden and crisp.
3. Flip, and cook to your preferred doneness (medium-rare recommended).
4. While cooking, baste with melted butter infused with rosemary.
5. Rest for 10 minutes before slicing thinly against the grain.



📖 Story Behind the Dish:
Picanha is Brazil’s most celebrated cut of beef, taken from the top of the rump with its signature fat cap. In Brazilian churrascarias, it’s skewered, seasoned simply with salt, and cooked over open flames before being carved at the table. That rich fat layer bastes the meat as it grills, giving every slice incredible juiciness and flavor. What was once a butcher’s secret has become a global BBQ favorite. 🇧🇷🔥

Pure goodness
This is always fun, fresh mozzarella cured meats & fruit

Recipe:
• Fresh mozzarella, marinated in mint & olive oil
• Grilled figs
• Strawberries
• Prosciutto slices
• Fresh herb dressing (parsley, basil, chives, olive oil, lemon juice)
• Smashed hazelnuts
• Balsamic vinegar
• Cracked black pepper

Method:
1. Marinate mozzarella in chopped mint & olive oil for 30 minutes.
2. Grill figs until caramelized.
3. Slice strawberries and prosciutto.
4. Toss herbs into olive oil & lemon juice for dressing.
5. Assemble: layer mozzarella, figs, strawberries, and prosciutto.
6. Drizzle dressing and balsamic, sprinkle hazelnuts & cracked black pepper.

Inspired by markets with fresh cheese, cured meats and fruit, this salad brings sweet, savory, and nutty flavors together. Perfect for sharing, or keeping all to yourself
