INGREDIENTS//
For Rice :
Oil 10 tbsp
Rice 1 kg (5 cups)
Tomatoes 4 Pureed
Onion Sliced 1 Large or 2 medium
Peas 1 cup ( Half Kg before peeling off )
Carrots 2 large
Capsicum 4 small or 2 large
Salt 1 TBSP (or to taste, be mindful while adding because sauces have salt in them)
White Pepper 1 TBSP
Oregano 1 Tsp
Parsley 1 Tsp
Aalo Bukhara 3-4 pieces
Red chilli powder 1 TBSP
Red Chilli Crushed 1 TBSP
Paprika 1 Tsp
Yogurt 1 cup ( 200 grams )
Jalepenos/Large Sized Green Chillies sliced 6-8
Tomatoes Sliced 1-2
Kalonji Half Tsp
Water 7 cups ( 7 cups In total including Chicken Stock )
Mixed Sauces for Rice :
BBQ Sauce 1 TBSP
Worshtshire Sauce 1 TBSP
HP sauce 1 TBSP
Soya Sauce 1 TBSP
Hot Sauce 1 TBSP
White Vinegar 1 TBSP
For Chicken Stock:
Water 5 Cups
Onion 1 Whole
Ginger 1 inch piece
Garlic Cloves 6-8
Spices in cloth:
Fenugreek 1 TBSP
Curry leaves 2
Coriander 1 TBSP
Cumin seeds 3 TBSP
Mace 1
Nutmeg 1
Cloves 8
Black pepper whole 8
Cinnamon sticks 4
Star Anise 4
Green Cardamom 2
Black Cardamom 2
METHOD//
STOCK :
•Add 5 cups of water in a pan add Onion , Ginger , Garlic Cloves and cover for 5 mins.
•When it's about to boil add spices tightly Tied in a muslin cloth (if you don't have cloth or don't want to put it in you can add directly and then strain the stock before adding it in Rice)
•Cover and cook for 5 minutes.Then add Organic Chicken meat in it cover and put it on low flame for 15 minutes
• Cook it untill water is reduced to half.
• Take out the meat strain the stock and set aside.
RICE :
• Take a large pan add oil in it.When oil is heated add Rice (soaked for 15-25 minutes and strained properly) Cook rice in oil with constant stiring untill they become slightly golden
• When rice change colour add on onions , tomato puree and mix well.
• Add sauces mixture , Salt , White Pepper , Paprika , Red Chilli Powder & Crushed both , Aalo Bukhara , Garam Masala Powder mix well.
• Then Add all vegetables (including green chillies sliced) you want to add mix well.
• Add half done meat ( which we've cooked in stock) mix it.
• Then measure the stock add on water in it to make it exact 7 cups.Add that stock and water mixture in Rice mix well.
• Add Yogurt.
• Cover and cook on high flame for around 5 mins then reduce the flame to medium and cook untill rice half done or water dries up
• When water dries up and rice are half done top them with sliced tomatoes and some cilantro/ green coriander cover and put it on low flame ( dum ) for around 15 mins.
