🔥 Chatkhara Kabab
Crispy kababs tossed in garlicky yogurt masala – bold, spicy & full of chatkhara! 🔥 A must-try desi favorite.

📝 Ingredients
For Kababs
Minced beef or chicken – 500 g
Onion (very finely chopped & squeezed) – 120 g (¾ cup)
Green chilies (finely chopped) – 2–3 pcs (15 g)
Fresh coriander (chopped) – 2 tbsp (8 g)
Fresh mint (chopped) – 1 tbsp (4 g)
Ginger paste – 1 tsp (5 g)
Garlic paste – 1 tsp (5 g)
Red chili powder – 1 tsp (4 g)
Crushed red chili – ½ tsp (2 g)
Black pepper (crushed) – 1 tsp (3 g)
Cumin powder – 1 tsp (3 g)
Coriander powder – 1 tsp (3 g)
Garam masala – ½ tsp (2 g)
Salt – 1 tsp (6 g) (or to taste)
Roasted gram flour (besan) – 2 tbsp (20 g)
Egg – 1 small
Oil – 3 tbsp (45 ml) (for shallow frying)
For Yogurt Masala
Thick yogurt – 200 g (¾ cup)
Salt – ½ tsp (3 g)
Red chili powder – ½ tsp (2 g)
Cumin powder – ½ tsp (2 g)
Coriander powder – ½ tsp (2 g)
Black pepper (crushed) – ½ tsp (1.5 g)
For Final Toss
Oil – 2 tbsp (30 ml)
Garlic (crushed) – 1 tbsp (10 g)
Onion (thinly sliced) – 1 small (60 g)
Green chilies (slit) – 2 pcs
👩🍳 Method
In a bowl, combine all kabab ingredients. Mix well for 5–6 minutes until slightly sticky.
Rest mixture for 10 minutes. Shape into thick kababs.
Shallow fry on medium heat until evenly golden and cooked through.
Remove kababs and keep aside.
Yogurt Masala:
In a bowl, whisk yogurt with salt, red chili, cumin, coriander, and black pepper. Keep aside.
Final Cooking:
Heat oil in a pan. Add crushed garlic and sauté until fragrant (do not brown).
Add fried kababs and gently toss.
Pour in yogurt mixture, mix carefully, and cook on low–medium flame until moisture dries and kababs are well coated.
Add sliced onion and green chilies. Cook for 1 minute.
Turn off heat and serve hot.
