Umami Gurr Wali Roti.
This roti is not just any roti. For me, it's pure nostalgia. Every step of it's preparation brings back to me countless memories from my childhood, and of course, my mother's! As a child I was very scared of air travel and preferred our annual winter holiday trip to Lahore from Quetta by train. That was one journey I looked forward to the entire year. Reasons were several; meeting my khala and her family, buying tiny 1rupee Urdu story books at every station to read and, indulge into ammi k haath ki gurr wali roti that she'd start preparing days prior to travelling. I remember clearly how much effort ammi put into these rotis, getting the purest form of aged gurr, transforming it into a blissfully aromatic "sheera", kneading the dough with milk and desi ghee and adding just the right amount of saunf. The baking demanded even more patience. I used to sit with ammi in the kitchen on a small "choki" on the floor and watch her bake one roti at a time...
She used to say, "we need to make extra for the other passengers travelling with us in our "bogi." And I knew why; because everyone we shared our gurr wali rotis with, always asked for one more!
Umami is not just any food business. It's a revival. Revival of our traditions and culture.
And I hope that I am able to keep these alive in the form of flavours that must be shared...
