CHOCOLATE MOCHI 🍫🤤

For the Mochi Dough;
100g Glutinous rice flour
20g Cocoa powder
40g white sugar
160ml Fresh Milk
1 tsp oil
For the Ganache Filling;
120g Dark chocolate
80ml heavy cream
10g unsalted butter
1 pinch of salt
Procedure;
-Ganache Filling-
1.Place the chopped chocolate in a bowl.
2.Heat the heavy cream until it just begins to simmer, then pour it over the chocolate.
3.Let it sit for 2 minutes, add the butter and salt, then stir until silky smooth.
4.Freeze the mixture for about 30 minutes until firm enough to scoop. Roll into small balls and keep them in the fridge while you make the dough.
-Mochi Dough-
1.In a microwave-safe bowl, whisk together the glutinous rice flour, cocoa powder, sugar, and milk until there are no lumps.
2.Cover the bowl with plastic wrap (poke a few holes for steam) and microwave for 1 minute.
3.Remove, stir with a wet spatula, and microwave for another 1 minute. The dough should look translucent and very sticky.
Stir in the vegetable oil while the dough is hot to make it extra stretchy and shiny.
4.Generously dust your work surface with cocoa powder. Place the warm dough on top and coat it so it doesn't stick to your hands.
5.Divide the dough into equal pieces.
6.Flatten a piece of dough, place a chilled ganache ball in the center, and pinch the edges of the mochi together to seal it.
7.Roll the finished mochi in more cocoa powder. Enjoy!
