Freedom Brew flies to Bangkok, Thailand!

We got a fantastic opportunity to run our Brewing Discovery Workshop at the HQ of .official TCBL "Monday What" with the help of Champ Brewer Piiano of and TCBL "Everybody Wanna Brew Like Me!".

The turnout was great, and we witnessed and tasted (!) the progression of deliciousness as each brewer applied the theories to their techniques. It was a good mix of home brewers, baristas, influencers, and even roasters!

Freedom Brew is a one-of-a-kind Brewing and Sensory Discovery Workshop with a format that equips the participant with the tools to understand extraction and its specific effects on sweetness, acidity, body and aftertaste! The format is based on research and constructed to be fun as much as it is informative and empowering!

Results are immediate, and we learn to break barriers together one brew at a time!

Even if our languages are different, our connection through coffee is strong!

Shall we do another run in Thailand? 😉

This collaboration of the Philippines Top 3 Roasters of 2024, Team PH at the Asia Roasting Championship in Thailand 2024, and very close colleagues in the industry Edgar Kawig Jr. Jurbenn Famularcano .friends and Raoul de Peralta aims to share their craft, passion and their pursuit of finding flavorful roasting philosophies, theories, styles and techniques that promise to give you a tasty cup of coffee and a deeper appreciation for the expertise put into every batch!

VERSIONS Vol One includes 3 x 30 grams of uniquely profiled roasts of the natural processed, Colombia Potosi Farm's, Tres Dragones, produced by the amazing Cafe Granja La Esperanza!
These ripe cherries are picked, fermented for 36 hours at low temperatures, and dried in three mechanical, furnace powered silos for 48 hours. The furnaces are said to send sparks and "dragon fire" into the sky, hence the name "Tres Dragones" or the Three Dragons!

This method gives deep purple fruit notes, chocolates and caramel, guava, with winey and funky notes! But each roaster can tip the flavor scales and create a fruity cup, a sweet and balanced cup, or even a funky one!
Together, let's grind, brew, taste, and learn from the nuances and complexities that each roaster's technique creates and experience a multitude of flavors coming from a single origin coffee.

The set will also showcase 30 grams of a Roaster's Choice coffee that each roaster has chosen that highlights their style, technique, and interpretation of the origin and its innate flavors!
