"Culinary Med Iloilo 2026"

Culinary medicine is an evidence-based field blending the art of food and cooking with the science of medicine to prevent and treat disease. It helps people make personalized, enjoyable food choices to improve health, focusing on practical skills like shopping, cooking, and storing food to manage specific medical conditions.

April 2026 is when I get to meet my immersion batchmates and it was one of the most enriching experience that showered all of us with knowledge, camaradarie, fun and a more enriched knowledge on food as medicine in the Primary level of healthcare.

"Kimchi"

a nutrient-dense Korean dish packed with beneficial Lactobacillus bacteria, a probiotic produced during fermentation. These probiotics boost digestive health, strengthen immunity, and reduce inflammation, while the fiber acts as a prebiotic to support a healthy gut microbiome. It may also aid in heart health and weight management.

Key Probiotics in Kimchi
The fermentation process, which uses vegetables like cabbage and radish, creates live, active cultures.

Lactobacillus:

The dominant strain of lactic acid bacteria (LAB) in kimchi, which helps maintain intestinal balance and inhibits harmful pathogens like E. coli.
Diverse Microbiome: Kimchi introduces beneficial microbes that increase the diversity of the gut microbiota, which is a key marker of overall health.

Major Health Benefits

Improved Digestion: Probiotics break down food and assist in nutrient absorption, while fiber aids in regular digestion and helps ease bloating.
Immune System Support: Because a large portion of the immune system resides in the gut, the probiotics in kimchi help strengthen immune defenses against pathogens.
Reduces Inflammation: Active compounds, such as HDMPPA, and probiotics found in kimchi may help fight chronic inflammation.
Cardiometabolic Health: Regular consumption is linked to lower cholesterol, reduced blood sugar, and improved insulin sensitivity.
Weight Management: Research suggests kimchi may assist in weight and fat loss.

Nutritional Highlights

Low-Calorie & Nutrient-Dense: High in fiber, vitamins (A, B, C), and minerals.
Prebiotic Power: The cabbage and vegetables act as prebiotics, feeding the beneficial probiotics in your gut.

Tips for Consumption

Choose Unpasteurized: Look for unpasteurized, fermented kimchi in the refrigerated section to ensure the probiotics are live and active.

Consistency is Key: Including small, regular portions of kimchi in your diet is more beneficial than eating large amounts occasionally.
Moderate Intake: Due to its high sodium content, it is best eaten in moderation.

"Before pharmacies, there were kitchens. Before prescriptions, there were plants."

Long before modern medicine took form, ancient civilizations quietly practiced what we now call

โ€œfood as medicine.โ€

In Ancient China, warming soups with ginger were used to restore balance in the body.

In Ancient Greece, Hippocrates famously taught that food itself could be our first line of healing.

In Ancient India, Ayurveda used spices like turmeric and garlic to fight inflammation and disease.

Even our ancestors here in the Philippines relied on simple remedies:

Ginger (salabat) for sore throat
Guava leaves for wound care
Malunggay for strength and nourishment

No fancy labels. No synthetic compounds. Just knowledge passed through generations.

Today, science is catching up to what tradition has long known:

Food is not just fuel. It is information. It is prevention. It is medicine.

Sometimes healing doesnโ€™t begin in the clinic.
It begins on your plate.

Turmeric

Key Health Benefits
1. Anti-inflammatory effects
Best known for reducing inflammation in conditions like arthritis, heart disease, and even some cancers

2. Antioxidant support
It helps neutralize free radicals and may boost your bodyโ€™s own antioxidant enzymes

3. Joint and arthritis relief
People with osteoarthritis or rheumatoid arthritis sometimes find relief in pain and stiffness when using turmeric regularly

4. Heart health
Curcumin, the active ingredient in turmeric, may improve the function of the lining of blood vessels and help manage cholesterol levels, which supports overall cardiovascular health

5. Brain health
Some research suggests it may help increase levels of brain-derived neurotrophic factor (BDNF), which supports memory and may reduce risk of neurodegenerative diseases

6. Digestive support
Turmeric can stimulate bile production, helping with digestion and reducing bloating in some people

7. Immune support
It has mild antimicrobial and immune-boosting properties, which may help your body fight infections

Keep in Mind
Not a cure-all: It supports health but doesnโ€™t replace medical treatment.

Possible side effects: High doses can cause stomach upset, and it may interact with medications (like blood thinners).

Easy Ways to Use It

Add to soups, stews, or rice
Mix into warm milk
Use in tea with ginger and honey
Sprinkle into scrambled eggs or vegetables
