Chicken Inasal is a delicious dish of chicken parts marinated in local herbs and spices, skewered on bamboo sticks then grilled to juicy perfection that originated from Bacolod City in the Visayas. The best way to enjoy chicken inasal is to dine in and be served by the friendly Visayan staff at Bacolod Chicken Inasal restaurants. It’s a mouthwatering experience to eat freshly grilled chicken inasal na paa (thigh and leg) or inasal na petso (chicken breast with wing) dipped in a special sauce called sinamak (naturally fermented coconut vinegar) mixed with soy sauce and calamansi. The best partner for chicken inasal is a cup of garlic rice yellowed by atchuete (annatto) oil. The story of Inasal: This recipe of prime chicken cuts marinated in choice herbs and spices, skewered on bamboo sticks then basted with atchuete and grill, has always been a beloved staple of Bacolod cuisine. When the Spaniards discovered this mouthwatering dish they assumed the chicken was roasted, “Asar” in Spanish. The natives adopted the verb but could not pronounce the hard “R” at the end. So the name “inasal” was born, lightly tripping off your tongue and delighting your taste buds.
