I attempted to do Paella last night and boy was I humbled on I thought was a ‘simple’ dish.
1. Added too much toppings.
2. Was not patient enough to cook my sofrito nicely
3. Did not like the chistorra I added. I should’ve sticked to my favorite chorizo.
4. Added to much stock ended my bomba rice to ‘puffy’
5. Soccarat is burnt not crispy 😂

I’ll do better xx
