I grew up in these pathways, where livelihoods, trust, and everyday life come together.

The issue is not improving basic facilities, sanitation, waste management, utilities, and circulation. These are necessary.

What we do not support is mallification itself. Reducing public market space, enclosing it within commercial structures, or prioritizing parking and rent over people fundamentally changes who the market is for.

Over time, I came to understand this more clearly: a public market functions as a living socio-economic system. It sustains food access, informal livelihoods, social ties, and the daily rhythms that keep a city running.

How it is redeveloped determines whose lives are sustained, and whose are displaced.

I grew up around the Baguio public market.
My family has been part of it for decades, sourcing coffee and produce from the people who keep this city alive.
In my fieldwork and in our daily business, I’ve seen how the market supports Indigenous farmers, migrant vendors, porters, small retailers, and families who rely on low rental rates to keep food affordable.

This is why the proposed SM-led redevelopment matters.
This isn’t just about “modernized” infrastructure or building.
This is about who gets to shape the future of a public space that has always belonged to the community.

When SM cut 182 pine trees at midnight to build a parking structure, the impact did not end on Luneta Hill. The new structure brought more vehicles into the area, which contributed to slower jeepney routes and heavier congestion around Session, Harrison, and the city center. This is one example of how private development can quietly reshape how a city moves. Infrastructure changes daily life because it reorganizes movement, access, and the flow of people.

The proposed market redevelopment will reshape these flows too. A mall-style complex at the heart of the city will change where people enter, gather, buy food, or wait for rides. It will alter how vendors move goods, how farmers bring produce, and how consumers navigate the city center. When a public market becomes a corporate space, mobility shifts with it. These are the kinds of long-term changes that cannot simply be reversed once they take root.
Baguio deserves redevelopment, but not mallification.
Not higher rents.
Not displacement.
Not another space redesigned for profit instead of people.
Public markets must remain publicly led and community shaped, accessible to everyone, and grounded in the relationships that keep the city alive.
MARKET FOR ALL, NOT FOR MALL.

When you talk to farmers in the Cordillera, you’ll often hear this: “Coffee is like gold.”

And it truly is. Each cup you enjoy carries years of care, labor, and patience—because coffee doesn’t “just grow on trees.” From tending seedlings in the baëng (backyard garden) to harvesting once a year, the process is long and costly—half of what’s earned often goes to labor alone. But for many, it’s worth it. Coffee sustains not just families, but entire communities.

Ask anyone here and they’ll tell you: coffee is never just coffee. Often it comes with Filipino traditional snacks—pandesal with strawberry jam, a slice of colorful sapin-sapin, or linnapet wrapped in banana leaf.

These pairings look simple, but they carry stories: afternoons with family, mornings when neighbors drop by, or cool evenings when people gather at the table. Each cup feels fuller and warmer, thanks to the company and the little traditions around it. In Cordillera, coffee is always meant to be shared. 💛

When customers take the time to notice the details: the freshness of the roast, the care in the packaging, the stories behind every bean—it means the world to us. 💛

Since our days as Yama Coffee and through the journey of our team over the years, our mission has always been clear: we are not here to “just sell” coffee or chase profits. What drives us is furthering our advocacy through the one thing we love most, coffee.

Now that we are Alluyon Coffee, nothing has changed. In fact, our purpose has only become clearer. We are here to honor the Cordillera, its culture, traditions, and community. We are here to support livelihoods by promoting single-origin, traceable coffee and by standing with sustainable farming practices that care for both people and land.

In the Cordillera, the land teaches us to be resourceful. Nothing is wasted, and everything has its use.

That same principle guides us at Alluyon. Long before we were Alluyon, back in our Yama Coffee days, we’ve always aligned our decisions with the Sustainable Development Goals. So when we introduced Atok Cascara Tea, it was our way of practicing SDG 12: Responsible Consumption & Production.

By recycling the husks of the coffee cherry, we reduce food waste and give farmers an extra income stream with little to no cost. For us, it’s a win-win: farmers benefit, and we all get to enjoy a refreshing, tangy-sweet drink that’s part of coffee’s story.

And of course, your safety is a priority. Our Atok Cascara Tea has been lab-tested and marked safe for consumption!

Cordillerans have long practiced two time-honored crafts: weaving and coffee cultivation. Both are slow and deliberate. Both require care and patience.

A woven fabric takes time, thread by thread. Coffee, too, asks for the same care—months of tending before a single cherry is ready to pick. They’re different crafts, but they share the same spirit: steady, and deeply connected to the land and people who create them.

And just a fun fact: our Alluyon font pays tribute to this connection. The lines and patterns are inspired by the intricate designs of Cordilleran weaving. It’s our way of carrying a piece of that artistry into our advocacy.

We have so much admiration for this culture. The stories, rhythm, and care it brings to both craft and community. Here’s to honoring the hands that weave, and the hands that harvest. 🤎

When you brew a cup in December, you’re tasting work that started back in the rainy months. In August and September, farmers trim old growth, feed the trees, manage shade, and prep drying beds so the plants enter harvest strong.

By November, the focus shifts: pick the red cherries, handle them gently, and choose the right process. Every process impacts the sweetness, brightness, and body in your cup.

You don’t have to remember all that when you brew, but it’s great to know that every sip is a product of a community’s hard work months before it reaches your cup. ☕
