100% Bacolod Homemade Condiments Inasal is basically grilled chicken, but with a very distinct and delicious twist.

For starters, in inasal, the chicken is marinated in vinegar, calamansi, and other spices such as lemongrass and ginger. It also has a trademark orange color that comes from a special basting sauce made from annatto or achuete oil. Once marinated (preferably overnight), the chicken is then grilled over coal while basted with the aforementioned marinade. In fact, in Ilonggo dialect, “inasal” litera

lly translates to “char- grilled” or “roasted” meat. The taste is equal parts tangy, smoky, and savory. Like most Filipino dishes, it is best served with rice (some prefer plain, others like garlic rice). So don’t be surprised if you find yourself asking for more rice than usual. Note, though, that you might find yourself eating more rice than usual. For an even better flavor, partner it with a dip made of a mixture of calamansi and soy sauce. Some prefer to add chicken oil, too, which may not be the healthiest thing in the world. But it’s one of the things that gives this Pinoy dish an extra kick. Additionally, those who prefer to have their food a little spicy only need to add a piece of chili in their dip.
