One of my favourite parts of creating a wedding cake is helping couples choose the flavours that will be part of their special day. 🤍

This tasting box includes three flavour combinations:

🍋 Lemon Cake filled with lemon & poppy seed ganache and mixed berry jam
🍍 Pineapple Cake filled with creamy coconut ganache and pineapple jam
🤎 Lotus Biscoff Cake filled with creamy salted caramel ganache

All finished with my white chocolate buttercream.

This custom creation featured soft and fluffy lemon sponge layers filled with creamy lemon ganache and blueberry jam in one layer, and coconut cream cheese frosting with luscious lemon curd in the other.

Finished with a simple yet elegant sage-grey design and topped with the most beautiful delicate white flowers, this cake was created to honor a moment filled with love, memories, and connection.

I felt truly honored to be part of this beautiful Mother’s Day activity with the lovely residents at a retirement village, decorating cupcakes together.

There’s something so special about sharing a little bit of your time and care with people who carry so many life experiences and stories within them.

I’m going to be part of my very first wedding expo ever!!

This July 4th, I’ll be at the Northland Expo Wedding 2026 at MacKay Stadium in Whangarei, NZ… and honestly, I almost didn’t do it. The idea of putting myself out there like this makes me so nervous. But at the same time, it feels like such a big step for me and my little baking business. Well growing is a little bit scary...but exciting!!

I keep thinking back to when I first started baking in Mexico, just for fun, sharing desserts with my family and friends. So many times (even now, to be honest 😂) things didn’t turn out the way I wanted… but I never gave up. I’d just try again. And little by little, things started getting better. That’s when people began telling me, “you should sell them!” and I remember thinking… really? you think so? haha

This journey of becoming a baker here in NZ hasn’t been easy. Every order, every request from my customers, every “can you make this?” has pushed me to figure things out, to be creative, and to trust myself more.

So this expo feels like the next challenge… and also something really exciting. Being surrounded by so many amazing vendors and creatives in the wedding industry? I already know it’s going to be inspiring.

No matter what happens that day (I mean… hopefully I sell many cakes), I already feel proud of myself for saying yes to this opportunity.

Pink Spot Reposteria is a home-based baking business born from a passion for creating beautiful and meaningful cakes.

Originally from Mexico, Adriana started this journey there and has continued growing her business after moving to New Zealand, where she now shares her work in Kerikeri. Her cakes have become part of special celebrations, including weddings, where she creates custom designs with care and attention to every detail.

This little cake has a whole behind-the-scenes story:
I actually made this one just to take photos… and I had the great idea of putting parchment paper at the base so I could easily remove it later… well… bad idea.

Every time I tried to smooth the buttercream, the cake kept sliding around!! It took me way longer than expected to get it right.

I made it at night, but I never like taking photos of my cakes at night — natural light is everything, so you’ll see in the video how I finished it the next morning, all fresh and showered!!

And don’t even get me started on the flower… it was way too tall at first!! I had to take it out and trim the stem a few times until it finally looked right.

This cake definitely had its funny moments behind the scenes… but it’s ready now yayy

Now I just hope I can sell them all 🙈
