Eggless Mango Cake

Ingredients
For mango sponge
🥭 2 cups maida
🥭2 tsp (8 g) baking powder
🥭½ tsp (3 g) baking soda
🥭½ cup (120 ml) vegetable oil
🥭1 cup (225 g) caster sugar
🥭1 cup (265 ml) mango purée
🥭1 tsp (5 ml) vanilla extract
🥭¼ (60 g) cup milk

For Frosting
🥭1 cup (120 g) cream cheese
🥭½ cup (100 g) butter
🥭1 tsp (5 ml) vanilla extract
🥭¼ tsp (1 g) cardamom powder
🥭1+ ½ cup icing sugar

Garnish
🥭Fresh mango slices

Instructions
1. Pre -heat the oven to 180 degree C and line two 8 inch round cake pan with parchment paper.
2. In a bowl whisk together flour, baking powder and baking soda and set a side.
3. Whisk together castor sugar and oil in a separate bowl until pale and well combined.
4. In a blender, puree some chopped mangoes and add the mango puree to the sugar oil mixture.
5. Add the vanilla extract and milk.
6. Gently fold in the flour and mix until everything is well combined there are no large flour pockets in the batter. Do not over mix at this stage.
7. Transfer the batter to the prepared cake pan.
8. Bake at 180C for 30-35 minutes or only until a skewer inserted in the center comes out clean.
9. While the cake is baking, prepare your frosting by beating cream cheese, butter, vanilla and cardamom together. Add icing sugar slowly in batches and beat until well incorporated.
10. After the cakes have cooled, assemble your cake by frosting it and decorate with fresh mango slices. Enjoy!

How to make icecream cone

Icecream Cone

Ingredients
🍦2 tbsp sugar
🍦2 tbsp butter, melted
🍦1/4 cup milk
🍦1/4 tsp vanilla
🍦1/4 cup all-purpose flour

Process-
1. Combine sugar, melted butter, warm milk, vanilla extract, and all-purpose flour in a bowl. Whisk until a smooth batter forms.
2. Heat the waffle cone maker on medium flame and pour a ladle full of batter onto it. Close the maker and cook it from both the sides by flipping the cone maker.
3. Cook for approximately 2 minutes or until golden brown.
4. Remove carefully and shape it into a cone using a cone mould. Be careful as it may still be hot, but shape it quickly before it hardens.

Carrot Cake

2 cups All Purpose Flour
1 cup white sugar
1/2 cup brown sugar
3/4 cup vegetable oil
2 cups finely grated carrots
2 large eggs
1/2 cup buttermilk
2 tsp baking powder
1/2 tsp bicarbonate of soda
2 tsp vanilla
1 tsp ginger powder
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/2 cup raisins (optional)
3/4 cup chopped walnuts

Instructions
Preheat the oven to 170 Degrees Celsius.

1. In a large bowl add oil ,white and brown sugar . Beat until light .

2. Mix in the eggs one at a time .Add buttermilk and vanilla then mix well .

3. Sift in flour , baking powder, bicarbonate of soda , salt , cinnamon, nutmeg and ginger . Then gently mix .

4. Add the grated carrots, walnuts and raisins . Gently mix.

5. Line 2 baking pans with parchment paper. Divide the batter (mixture) equally in 2 baking pans .

6. Bake in a preheated oven for 30-35 minutes minutes or until well baked . Note: Baking time depends on your oven .

Let the cakes cool off completely before taking them out of the baking pan.
