Do you know the difference between Afang and Ukazi soups?
Afang soup and Ukazi soup are Nigerian vegetable soups that uses Afang as known in the Efik/Ibibio language and Ukazi or Okazi in Igbo.
Afang Soup originates from the Efik and Ibibio people of Cross River and Akwa Ibom states in Southern Nigeria while Ukazi Soup (Ofe Okazi) originates from the Igbo people of Southeastern Nigeria
For the Efiks/Ibibios, it is prepared with a generous amount of blended or pounded Afang leaves (Ukazi) and water leaves, with the bulk of vegetables forming the thickening of the soup.
For the Igbos, they use less finely sliced Ukazi leaves with thickeners like cocoyam (ede), achi, ukpo, egusi balls or achara (a type of grass), or ofo to achieve its viscosity. They sometimes add a small amount of Uziza leaves for a unique flavour.
