🍰 Soft & Creamy Vanilla Cake Squares

Ingredients

For the cake
• 2 cups all-purpose flour — 250g
• ¾ cup granulated sugar — 150g
• 2 large eggs
• 1 cup milk — 250ml
• ½ cup vegetable oil — 100ml
• 1 teaspoon baking powder
• 1 teaspoon vanilla extract

For the cream
• 2 cups whipping cream — 500ml
• 2–3 tablespoons icing sugar, optional
• 1 teaspoon vanilla extract

Method

Preheat your oven to 170°C and line a square baking pan with parchment paper.

Whisk the eggs and sugar until well combined and slightly fluffy.

Add the milk, vegetable oil and vanilla extract, then mix until smooth.

Sift in the flour and baking powder. Mix gently until you have a smooth, lump-free batter. Avoid overmixing.

Pour the batter into the prepared pan and spread evenly.

Bake for about 25–30 minutes, or until a skewer inserted into the centre comes out clean.

Allow the cake to cool completely.

Whip the cold whipping cream with icing sugar and vanilla until it becomes thick and holds its shape.

Spread a generous layer of whipped cream over the cooled cake and smooth the top.

Refrigerate for at least 1–2 hours to firm up.

Cut into neat squares and serve chilled.

Tip: For the softest texture, don’t overbake the cake, and make sure it is completely cool before adding the whipped cream.

Classic Vanilla Buttercream Frosting

Ingredients

2 cups unsalted butter, softened (450g)

8 cups icing sugar (960g)

4 tablespoons heavy cream or milk (60ml)

2 teaspoons vanilla extract (10ml)

¼ teaspoon salt

Instructions

Cream the softened butter until pale and fluffy.

Gradually add the icing sugar, mixing on low speed after each addition.

Add the vanilla extract, salt, and heavy cream.

Beat on medium-high speed for 5–7 minutes until the frosting becomes light, fluffy, and silky smooth.

If the frosting is too thick, add a little more cream, one teaspoon at a time.

If it's too soft, add a little more icing sugar until you reach your desired consistency.

Use immediately to frost cakes and cupcakes, or store in an airtight container in the refrigerator for up to 1 week. Bring to room temperature and re-whip before using
