Egusi soup popularly called melon soup can be cooked in various ways
1.boiled
2.fried. Although I am going to be giving tips on the fried method
Procedure:
1 get your ingredients ready
2 if using vegetables wash with salt before cutting , I prefer to mix ugwu leaf(pumpkin) ,bitter leaf and a dash of scent leaf.
3 .I also like using tin tomatoes for my melon soup it gives me a different taste which I enjoy so much
4.boil your meat or chicken as preferred , make sure when boiling add fresh garlic and ginger in order to retain the taste of the meat when you are eating it for a longer period time.
5.put your pot on the gas, add red oil, allows to bleach then add onion
6 before you add the melon make sure to mix with stock ,crayfish, and little peper
7. Add the mixture into the oil and onion mix then allow to fry for a while then add water little by little then cover allow the melon to cook a little then Open the pot then add your ingredients( I usually make use of know chicken cubes and lasor chicken spice!!!), when you do this add your meat or chicken then cover , open again after few minutes then add your vegetable last then stir wait for a while then put off the gas. You can serve hot or warm as desired with different kinds of swallow!!! Carry out this procedure and thank me later...love u all
